The Jesus Christ of of Latter-Day Saints church in my city is building a "stake center" a few blocks from their church. I can't find any information on it online, and I'm just curious what it is....?

A stake center is the center of a local diocease ( what catholics call it) It's the center where the Stake President and his presidency and Stake Council meet every sunday.
It's the hub of the local wards..The stake center may contain up to four wards or congregations in the meetinghouse.
There could be two or three more meetinghouses in the Stake. There could be up to 8 wards or congregations in the Stake. It is the place where a Stake Conference is done twice a year, where all the church members from all the wards meet. Sometimes a General Authority of the Church is speaking at Stake conference.

The stake center is basically just another church, but sort of the "main" one, for lack of a better term. It's not any more important than the other churches, and the people that attend that one regularly will usually be the ones that live near by. Whenever a conference or some type of activity (youth dance, etc.) is held, it will most likely be held at the stake center.

A stake center is a meetinghouse of the Church in which the administrative offices of stake leaders are also located.

because this sole Church that bears His name is so big and organized, it is zoned amogst itself, like an army. Several Wards make Stakes & are general in same kingdom, Lordship, county, parish, or district, whatever your county uses to zone[yeah, they're international]Several stakes make up Zion. there may be little Branches in a Ward.
