you can either fold in half or use one for top and one for bottom cook on both sides (flipping them when they brown)
i cook mine in a skillet browns better and gets done faster with same results.
the others are putting way too much effort into a simple process
Im a chef and i wouldnt go through all of that. if your pan is a good non stick then you can do it with no oil if it tends to stick use a little spray. put it in the skillet with all ingredients already in there....

1. Preheat the oven to 350Ë while you prepare the quesadilla.
2. Spray the baking sheet with cooking spray.
3. Lay the tortilla on the baking sheet and butter it so it will toast crisply in the oven.
4. Flip the tortilla over and sprinkle the cheese on it.
5. Fold over the tortilla so the cheese is inside and it looks like a half.
6. Place the baking sheet with the quesadilla on it in the middle of the oven.
7. Set the oven timer to 3 and a half minutes.
8. After 3 and a half minutes, take the baking sheet out and flip the quesadilla over.
9. Put the quesadilla back in the oven.
10. Set the timer for 3 and a half more minutes.
11. Once 3 and a half minutes are up, take out the quesadilla.
12. Let the quesadilla sit for 2-4 minutes.
13. Serve with a variety of toppings such as salsa, sour cream, guacamole, hot sauce.
Alternate Method
1. Warm a pan on the stove at medium to high heat.
2. Place tortilla on the pan.
3. Place the cheese on top on the tortilla.
4. Wait for the cheese to melt, once it melts use a spatula to fold the tortilla in half.
5. Brown and crisp to desired levels.
6. Enjoy.
Another, easier Method
1. Allow your George Forman Grill to warm
2. While the grill is warming, lay out a tortilla, if the whole tortilla will not fit onto the grill, fold it in half.
3. Lay out your cheese and other ingredients
4. If you did not have to fold the tortilla, put another on top of it.
5. Gently put the torilla with its filling onto the grill. Be careful not to spill!
6. A few minutes should do it, wait until the Quesdilla is slightly crispy
Tips
* A quesadilla can be made into a full dinner by adding many things such as chicken, beef, rice, or vegetables. It doesn’t always have to be an appetizer.
* You can always add different things to make it interesting.
* When making the quesadilla on a stovetop, make sure to not butter the pan, leave it dry.
Warnings
On a stovetop it will cook fast, so make sure not to burn the shell.

Heat a large cast iron frying pan to medium high heat. Add a small amount of oil (about 1/2 teaspoon) and spread it around the bottom of the pan with a spatula (you could use butter as well). Take one large flour tortilla and place it in the pan. Flip the tortilla over a few times, 10 seconds between flips. Air pockets should begin to form within the tortilla.
When pockets of air begin to form, take a handful of grated cheese, sprinkle over the top of the tortilla, making sure that the cheese does not land on the pan itself. Add whatever additional ingredients you choose - green onion, sliced mushrooms, olives, tomatoes, etc. If you would like your quesadilla to be a chicken quesadilla, add some diced cooked chicken. Take care not to layer on the ingredients to thickly.
Reduce the heat to low and cover the pan. The cast iron pan should be hot enough by now to have plenty of residual heat to melt the cheese and brown the tortilla. If the quesadilla begins to smoke too much, remove from the heat. After a minute, check to see if the cheese is melted. If not, return the cover and keep checking every minute until the cheese is melted. When the cheese is sufficiently melted, use a spatula to lift up one side of the quesadilla and flip over the other side, as if you were making an omelette. The tortilla should by now be browned slightly. If it is not browned, turn the heat up to high and flip the quesadilla over every 10 seconds or so until it gets browned. Remove from pan and cut into wedges.

Sprinkle 1/3 cup cheese over half of each tortilla. Top with your ingredients. Fold tortillas in half pressing gently.
In a 10-inch skillet cook quesadillas, 2 at a time, over medium heat for 2 to 3 minutes or untill lightly browned, turning once. Remove quesadillas from skillet; place on a baking sheet. Keep warm in a 300 degree oven. Repeat with remaining quesadillas. To serve, cut quesadillas into wedges. If desired, serve with salsa.

I figured out this delicious recipe for quesedillas on my own it's pretty simple. I brown the chicken in a non-stick pan with some extra virgin olive oil, and then drain the oil. Then stick the chicken in a crock pot with your favorite taco sauce for a while until it's cooked through. It gives the chicken a little kick and extra flavor for your quesedilla. You can also add some hot sauce to it if you like it spicy. Then heat your non-stick pan on medium heat, you shouldn't have to spray it first. put your chicken on half of the tortilla and cover that half with your favorite cheese(s) fold the other half over and place it on the pan. It should only take a MAX of 5 min on each side not even really. Then you're good to go! delicious.

Great you have all the ingredients...so you can have fun putting them together!.....Do you have a heavy frying pan? or a griddle like you make pancakes on? I'm sure you can make them in the oven also..whatever you have use it!
Place the flour tortilla down flat on the work surface and place the ingredients on ONE SIDE..of the circle.....example: refried beans, salsa, Monterrey jack cheese grated....FOLD..over the flour tortilla so you have a HALF CIRCLE...then press down a little..you can take egg and water or milk and egg and beat it ...then paint it on the edges and top ...before baking...it works like a glue...and gives it a nice golden color....just paint it on the one side the TOP...
Place on lightly greased heavy cast iron fry pan or on a griddle...or on cookie sheet that you oiled with veg. oil or that cooking spray you get in a can.
Bake in the oven 375 degrees until golden and heated through.
Or cook on MEDIUM HEAT in griddle or fry pan until everything is heated and lightly browned.

I make mine like a sandwich. I use two tortillas with the cheese sandwiched in between. I put this on a skillet at medium heat. Don't walk away because it cooks fairly fast. Flip the tortilla freaquently. When the cheese is melted then its ready. If you want to add chicken or veggies I cook these first then add them in (before I cook the tortillas).
