Extra sharp cheddar, but it also depends on what I'm eating. Some cheeses work better with certain meals that require cheese than sharp cheddar does...so, that actually, thats a toughie. I just like cheese. Queso Blanco and provolone are some more of my favorites.

I think the one cheese I buy more of than any other is Cheddar.
( I happen to like it yellow and SHARP)
My favorite, however, (if this were my last meal or something) is brie or camembert. I like it baked in a puff pastry shell, with a layer of fruit preserves on top. Yum, almighty!

I like alot of different cheese for different reasons...
My favorite is strong smelling, ripe, Camembert.
But I also like, Gouda, Cheddar, Parmesan, Bleu Cheeses, goat cheese, Gorgonzola, and Brie
