I season chicken legs with salt, pepper and garlic. Rub the spices into the skin. I then marinate them in a good Italian dressing for at least six hours. Fire up the grill or oven and cook until the internal temp is 170.

Spicy Hot Chicken Legs
"This is just like spicy chicken wings, only less work. Cooks up nicely in the slow cooker! A quick meal that is super easy and oh so yummy! For crispier chicken, bake in a 400 degrees F oven for the final 30 minutes."
Original recipe yield:
6 servings
PREP TIME 5 Min
COOK TIME 3 Hrs
READY IN 3 Hrs 5 Min
INGREDIENTS
* 12 chicken drumsticks
* 1 (5 ounce) bottle hot red pepper sauce
* 1/4 cup butter, cubed
* 1/2 teaspoon garlic powder
* 1/2 teaspoon onion powder
* salt and pepper to taste
* 1 1/2 cups blue cheese salad dressing
DIRECTIONS
1. Place the drumsticks in a slow cooker, and sprinkle evenly with pieces of butter. Pour the hot sauce over the chicken, then season with garlic powder, onion powder, salt and pepper. Cover, and cook on High for 3 hours, or until tender. Serve chicken legs with blue cheese dressing on the side.
OR
CHILI AND HONEY CHICKEN LEGS
The chili powder used here can be found in most supermarkets and is made from a blend of spices — it is much milder than pure chile powder from New Mexico, which is very hot. These chicken legs pair nicely with the succotash.
Makes 4 servings.
ingredients
2 tablespoons chili powder (not pure chile powder)
1 tablespoon mild honey
1 tablespoon fresh lime juice
1 teaspoon salt
1/2 teaspoon black pepper
4 whole chicken legs (2 lb), thighs and drumsticks separated
preparation
Put oven rack in upper third of oven and preheat oven to 425°F. Line bottom of a 15- by 10-inch shallow baking pan with foil and set an oiled large metal rack in pan.
Stir together chili powder, honey, lime juice, salt, and pepper in a large bowl, then add chicken and turn to coat completely.
Transfer chicken to rack, arranging in 1 layer, then bake, turning over once, until cooked through, 30 to 35 minutes.
GOOD LUCK!!

I make 'Oven Baked Chicken Leg Quarters' Any amount of leg quarters you need for this recipe but usually 6 fit on the pan nicely. Everyone loves this recipe. Heat oven to 400 degrees and use a jelly roll pan (the 12 x 18 one with the 1 inch side). Spray your pan with any type of pam. The butter flavor one works best. Clean and rince off your leg quarters and pat dry with a paper towel. Place them on the pan skin side up and spray with your buttered pam to coat all the skin. Sprinkle pepper, garlic powder and the grated parmesian cheese (the ones by kraft, etc you use for spaghetti topping) over the top of the chicken being careful not to over sprinkle any one area. Lightly respray the chicken being careful not to do too much or your seasonings will run off. Top this with a sessame seed coating. Pour 1 cup of warm to hot water into the pan being careful not to get it onto the chicken. This will cause a steam effect in the oven as well as keep the chicken moist while baking at a high temperature. Bake your chicken on the center rack of the oven (depending on the thickness of the leg quarters) for 45 minutes to an hour or until the juices in the chicken run totally clear and the skin at the end of the leg pulls slightly back away from the leg bottom. Very tastey. Serve 1 leg quarter per adult.
I make very good 'french baked potato wedges' to serve with this and I put them in the oven at the same time as the chicken. Depending on the thickness of the wedges, they may get done before the chicken. If they are, just take them out and cover them with a pan cover or tinfoil and keep them on the stove to keep warm until the chicken is done. Wash one large potato for every adult. Do not peel. Pat dry and cut into lengthwise wedges about 1 inch at the peel side. Place some vegetable oil, ( about 1/8 cup per potato) into a bowl and put wedges into the oil and toss gently. Using a gallon ziglock bag works well for this too. Remove wedges and gently shake off excell oil into the bowl and place wedges skin side down and wedge side up onto a jelly roll pan or into a shallow baking dish. They can sit next to each other but do not let them lay on their sides. Some times due to the shape of the potato they may have to lean against another one. Keeping them wedge side up browns the wedge part very nicely in the hot heat. Sprinkle them with salt, pepper and garlic powder. Sometimes I also sprinkle some parsley or even some parmesian cheese on them too. Bake at 400 degrees until they turn golden to dark golden in color depending on your preference. The outsides will be crispy and the insides very tender. Delicious.

Corn on the cobb or a salad works well with this meal.

If you can grill, please do.
That aside, the adobo chicken is the easiest and one the best flavors for chicken.
For grilling purposes, you douce (completely cover) the chicken leg with adobo seasoning, then cook.
Similar to Old Bay, Adobo is a unique series of seasonings including onion, garlic, tumeric, pimento, some chile, and other spices. It is salty which is good for grilling - creates a good outer texture for the chicken while leaving the interior very moist.
