Hi there:

If you can't find the veggie that the one responder directed you to at Wikipedia, I would try a summer squash such as zucchini but cook it for less time. We have that chayote in our grocery store, and I bought it once. It is a soft but not mushy mild flavoured type of thin skinned squash. I bought it after MY Guatemalan friend told me about it! All the best and good for you for blessing your boss!

Could that be pipian? If so, see if this might work. I saw several, but they called for some really unusual ingredients.

Pipian De Pollo (Chicken with Pipian Sauce)

I was trying to cut and paste it, but it didn't look right. Sorry to just post the link. I hate to do that.

Good luck. She sounds like a great boss.

Ok. I looked it up on wikipedia.
http://en.wikipedia.org/wiki/Guisquil
The chayote (Sechium edule), also known as choko, or christophine is an edible plant, which belongs to the gourd family Cucurbitaceae along with melons, cucumbers and squash.

So carrots would not be ok.
I can not find it on any store web pages.

Guisquil is in the squash family. In the U.S. they are generally sold as Chayote. In Louisiana we call them Mirliton. They are wonderful and there are so many ways to use them. They are fairly easy to find in some areas.
