Here's a recipe for a good layered Taco dip that serves 10 to 12. Multiply everything by ten to make enough to serve 100.
16 oz. can refried beans
1 cup salsa
2 cups sour cream
2 avocados
2 Tbsp. lime or lemon juice
1 clove garlic, minced
2 Tbsp. sour cream
1 cup salsa
2 cups shredded lettuce
2 tomatoes, seeded and chopped
2 cups shredded Pepper Jack cheese
In medium bowl or platter, mix beans and 1 cup salsa and spread evenly on a 12" round platter. Top with 2 cups sour cream. Mash avocados with lime juice, garlic and 2 Tbsp. sour cream. Spread over sour cream on platter.
Top with remaining 1 cup salsa. Sprinkle with lettuce, then tomatoes and cheese. Refrigerate 2 hours to blend flavors, then serve with tortilla chips and vegetables.

This one will scale up easily...Instead of the small round dish, use a couple of 1/4 sheet pans, cookie sheets or large platters.
INGREDIENTS for each 25 servings. Scale up to suit your needs.
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (1.25 ounce) package taco seasoning mix
1/4 head iceberg lettuce - rinsed, dried, and shredded
1 cup shredded Cheddar cheese
3 chopped tomatoes
1 green bell pepper, chopped
1 (2.25 ounce) can black olives, drained
DIRECTIONS
In a medium-sized mixing bowl, combine cream cheese, sour cream and taco seasoning. Spread this mixture in a 9-inch (or a little larger) round serving dish. Top the mixture with lettuce, Cheddar cheese, tomatoes, bell pepper and black olives.

My taco dip:
In a 9x9 square pan spread an 9 ounce block of cream cheese, then a pound of cooked hamburger, a small jar of mild chunky salsa, a half of a packet of taco seasoning, and then a package of shredded cheddar or marble cheese. Then stick it in the oven till the cheese melts. You could double it and put it in a 9x13 rectangle pan. This is a thick chunky dip so it goes a long way and its delicious! Everyone loves it. Make sure to put out lots of spoons and scoop or restaurant style nacho chips.
