MARINATED CUCUMBER SALAD
2 large cucumbers, peeled and sliced paper thin
1/4 teaspoon dill weed
1 tablespoon sugar
1/4 cup white vinegar
1/4 cup mayonnaise
Combine cucumbers with other ingredients and chill for 1 to 2 hours, stirring occasionally.
Serves 4
CUCUMBER SNACKS
1 (8 oz.) cream cheese
3/4 c. mayonnaise
2 pkg. Good Seasons salad mix
Cucumbers, sliced thin
Dill weed
Rye cocktail bread
Mix cream cheese, mayonnaise and salad dressing. Blend well. Spread on slice of cocktail bread. Top with cucumber slice. Sprinkle with dill.

That's a great low carb alternative to chips or "cocktail bread" which can get soggy......and the filling?? Anything you can think of, but I'll give you a hint, and USE THE DELI COUNTER TO YOUR ADVANTAGE HERE!!! Since cuckes have a neutral flavor, you can fill them with:
Ham Salad
Chicken Salad
Spreadable Cheese (like Rondele, Boursin, or Alouette)
Crab Salad
Tabbouleh (Middle Eastern Bulgar Wheat Salad)
Tuna Salad
Caviar
Curried Couscous (Middle Eastern Pasta, avail in most Delis)
I'm sure you get the idea from here, but you might want to explore your local Deli for some more suggestions, and good luck and Enjoy!!!

I think cucumbers and blue cheese go great together, so I like to fill them with a blue cheese dip made like this:
1 cup Blue cheese crumbled
1 tablespoon Lemon juice (fresh)
1 cup Sour cream
2 cloves Garlic
1/4 pound Cream cheese
1/2 teaspoon Salt
1 1/2 teaspoon Lemon zest
Allow cream cheese to warm to room temperature. Reserve 1 tablespoon of blue cheese. Mix remaining blue cheese, sour cream, cream cheese, lemon zest and juice, salt, pepper, and garlic thouroughly. Transfer to serving bowl. Sprinkle remaining blue cheese on top and garnish with addition lemon zest. Allow to sit in the refrigerator for at least one hour for the flavors to blend. Serve at room temperature. Makes 2 cups.

Use spinach dip. Or, do what I do: cream together cream cheese, a squirt of lemon, chopped fresh or dried mint leaves, and minced garlic.
I see that you might have difficulty keeping a filling in place, just because cucumbers are so slippery.

mix equal parts alloute (soft cheese, you get this in the deli, it comes in flavors like sundried tomatoes and basil or garlic and olive oil) crab meat and bread crumbs. season with black pepper and salt.
