That's crazy, I was just looking up Rice Pudding recipes on Foodnetwork.com cause I'm craving it too.. ha ha.. I'm going to try one of the recipes posted here, though. That Easy Rice Pudding recipe doesn't look too easy..

I have been using this recipe for quite a few years. It is really delicious.
Creamy Rice Pudding
Ingredients
1-1/2 cups cooked rice
2 cups milk , divided
1/3 cup sugar
1/4 teaspoon salt
1 large egg, beaten
2/3 cup Sun-Maid Natural Raisins
1 tablespoon butter or margarine
1/2 teaspoon vanilla extract
dash nutmeg or cinnamon
COMBINE rice, 1-1/2 cups milk, sugar and salt in a heavy saucepan.
COOK over medium heat, stirring occasionally for 15 to 20 minutes until thick and creamy.
BLEND remaining 1/2 cup milk and egg; stir into rice mixture.
STIR in raisins.
COOK an additional 2 minutes, stirring constantly.
STIR in butter and vanilla and spoon into serving dishes.
Sprinkle with nutmeg or cinnamon, if desired.
Makes 4 servings.

you could leave out the raisins, almonds, and fennel if you want.
Easy Rice Pudding
1/2 cup golden raisins
1 cup boiling water
1/3 cup slivered almonds
3 1/2 cups cooked medium or long-grain rice, at room temperature
2 1/2 cups milk
2 1/2 cups heavy cream
2/3 cup sugar
Pinch salt
2 teaspoons finely grated orange zest
1 1/4 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon finely grated lemon zest
1/4 teaspoon ground fennel seeds
In a bowl, place the raisins and cover with the water. Let sit until plumped, 5 minutes. Drain.
In a skillet over medium heat, toast the almonds until golden and fragrant, 3 to 5 minutes. Remove from the heat.
In a large saucepan, combine the rice, milk, cream, sugar and salt. Bring to a simmer, stirring, over medium heat. Reduce the heat slightly to maintain a low simmer and cook uncovered, stirring frequently, until the mixture starts to thicken, about 30 minutes. Continue to cook, stirring occasionally to prevent the rice from sticking, until a spoon is just able to stand up in the pudding, about 5 minutes. Remove from heat and stir in the raisins, almonds, and remaining ingredients.

Oh, I have the best out there, but should I share....okay, since you asked nicely....this time I'll remember to put in the rice :-)
3 cups milk, 1/2 cup 10% cream
1/3 to 1/4 cup white sugar
1 Tblsp butter
1/8 tsp salt, 1 tsp vanilla
1/2 cup dried rice (short grain, sticky rice)
In a heavy pot, cast iron like, place all ingredients except vanilla, bring slowly to a boil, stir constantly, leave simmering on low 30 minutes, covered, stir regularly. Remove from heat and add vanilla, it will thicken when you cool it. Don't overcook.
Add raisins if you like them, sprinkle with nutmeg or cinnamon to taste, I like it warm....
