What happens is that it uses up for fat first because that's long term stored energy but while its doing that it will replace it by leaking acid into your muscles and turning them into simple sugars for energy.

As I understand it, your body will begin using protein from your muscles first and then continues to do so with varying intensity depending on the legnth of your fast. At some point it begins to use your fat stores but it is still pulling from your muscles.

If it goes on long enough it will use the protein in your organs to supply fuel.

It retains your fat just in case, and uses muscle due to the lack of protein. If you don't eat, you aren't eating protein, your body needs x amount of protein to function and if it doesn't get it in the food you eat then it will get it from your muscles.
