Start off with some fresh cut fruit like mango,pineapple and jicima. Not sure if jicima is a fruit but it sure is good for starters,or with the meal. You can make vegetarian enchiladas. Read the label on cans of enchilada sauce to be sure it is animal-product free, as well as the tortillas, no lard. Bean and cheese enchiladas are so good ! Now they have great varieties of beans in the stores, I like the ones with lime in it. Use that with grated cheddar and diced onion, some brown rice and slices of avacado on the side. This will fill them up for sure! Sherbert or chocolate covered strawberries for dessert.

Recipe Ingredients:
1 small Onion sliced
2 Tbsp. Water
2 cups fresh Mushrooms sliced
1 Tomato chopped
10 Mission® Corn or Flour Tortillas
1 cup Carrots peeled and julienned
1 Green Pepper chopped
2 cups Zucchini julienned
1/2- 1 1/2 oz. package Lawry's® Taco Seasoning Mix
1 1/4 cup Monterey Jack Cheese grated

Recipe Instructions:
1. Place onion and water in a microwave safe 2 quart casserole. Cover and heat on High for 2 minutes or until onions are tender. Add remaining vegetables and taco seasoning. Microwave on High 13-15 minutes, or until vegetables are slightly tender. Set aside.
2. Wrap tortillas tightly with wax paper and microwave on High until tortillas are warm, approximately 45 seconds to 1 minute. Place 1 heaping tablespoon of vegetable mixture on one end of tortilla and sprinkle with 1 tablespoon cheese.
3. Roll up tortilla and place seamside down in a 12 X 8 inch microwave safe baking dish. Pour remaining liquid from vegetables over tortillas. Cover with wax paper and microwave on High for 5-6 minutes. Sprinkle with remaining cheese.
This is an easy vegetarian enchilada recipe, if your guests are vegan, you could easily substitute the dairy products for soy-based ones.

Easy Mexican Rice Recipe
INGREDIENTS:
* 1 onion, diced
* 3 cloves garlic, minced
* 1/4 cup olive oil
* 1/2 tsp ginger
* 1/2 tsp ground coriander
* 1/4 tsp ground cloves
* 1/4 tsp pepper
* 2 cups white rice
* 3 cups diced or pureed tomatoes
* 2 tsp salt
* 1 1/2 cups water
PREPARATION:
Sautee the onions and garlic in the olive oil for 3 to 5 minutes, until onions are soft.
Add the ginger, coriander, cloves and pepper and stir to combine.
Add the rice and stir to coat.
Add the tomatoes, salt and water and stir to combine. Cover and simmer over low heat for 25 to 30 minutes, or until liquid is absorbed and rice is done cooking.

My all time favorite is: a container of whipped cream cheese,a can of chopped green chili's, a can of vegitarian refried beans,and shredded montery jack and colby cheeses.Mix beans and cream cheese and chili's together and put in a glass pie plate. Top with as much or as little cheese as you want. Pop in microwave until all the cheese is bubbly. Serve with tortilla chips or use this mixture for the filling for tacos with lettuce and onions and tomatoes.

Corn Salsa
1 can sweet corn, rinsed & drained
1 can black beans, rinsed & drained
1-2 avocadoes, diced
cilantro, chopped (to taste)
1 container or jar of pico de gallo or your favorite salsa
Mix together and serve with corn chips. To die for!!!

My favorite one is "Tommy's Rice and Beans" from epicurious.com. It's a black bean dish. It's good by itself or you can stuff it in a tortilla with some cheese and salsa.
