I make spring rolls all the time, (this is the rice paper ones with no frying involved) but I do not know how to store them correctly for later eating. I have a potluck this Friday and it was requested that I make spring rolls, but all the times I have tried to put the spring rolls away, they have gotten hard.

Does anyone know how to store these spring rolls without them getting hard? I will be making them the night before, and they won't be eaten until lunchtime the next day!!

Please help!!

I make fresh spring rolls often for parties and get togethers. The best way I found is to put them in a container and then put press n seal wrap on one layer and then layer some more and put the wrap on again. They need to be refrigerated...so they will get a little hard. However you can put a damp paper towel on them and reheat them lightly in the mricrowave and they will soften...don't go too out of control with heating them up.

It has always worked for me.

Vegetable egg roll, vegetable fried rice, and vegan tofu dishes. You should specifically ask for vegan tofu because traditional mapo tofu and egg plant should come with minced meat. If you order a la carte it's easy for any Chinese kitchen to make you a truly vegan dish. If you don't eat eggs you should not order regular lo mein or noodle, but ask for rice noodle which is made only with rice flour.

Place them in a plastic container covered with a wet (not dripping wet) tea towel and then cover with the lid to the container. The moist tea towel will keep the spring roll wrappers from drying out and keeping them covered in the container will help as well.

Try wrapping them individually in saran wrap or wax paper. By sealing them you may find that they will not get hard.

have you tried wrapping them in plastic wraps, poly vinyl film. maybe you shouldn't put them in the refergerator and put in in an aluminun container and cover it with plastic wraps. that's what stores do and when i buy them, they don't seem hard.

I would try flash freezing them, and then bag them.
Take out in the morning, and by lunchtime they would be thawed.
