The hormel dried beef in a glass jar is supposed to be refrigerated after opening. I've had this jar for at least a month probably two months (opened, in the fridge). My boyfriend's mom keeps hers for quite a while (she does not believe in food poisoning)...however, i read that dried beef should be used within a week or so. I suppose this is right, but with all the preservatives...isn't it like beef jerky? I want to make chipped beef with it.....

Yes, it does go bad. It's not processed quite the same as beef jerky so it won't last as long.

If you smell the dried beef and it smells sour, I would not eat it.

I've seen dried beef with mold. try the kind in a blue bag in the refrigerated section. It's much better than the canned stuff.

Oh man, that stuff brings back memories! There is no way that could go bad...it has so much sodium in it, you could make a starfish puke. However, it is good for samiches!!!! It is 5X more hardy than beef jerky! You could use it for brake pads. Best Wishes! Cheers, jr!

Yes, it could go bad. Whenever we have it in the house to make our favorite dish we don't have the container for much longer after that depending on how big the portion size we want to have.

well, all i know is that my beef jerkey got moldy after a month in my back pack, so apparently yes, it does.

If it still smells ok and looks ok (not slimey or moldy), go for it!
