No matter what I do, my steaks always come out dry. I love to eat rib-eye steak and I like they well-done. Some one told me to sear them on both sides to seal in the juices and cover my pan with aluminum foil. But they don't come out as tender and juicy as I would like them. Any Ideas on what I should do?

You need to use a rub on your meat first of all. Then, I pan fry my steaks, and make sure that I use plenty of liquid (either olive oil or worchestire sauce). So, maybe add some olive oil to your pan. Check on it every so often and add more liquid if it looks like it needs it.

If you really want a well done steak why do you spend the money for a rib eye? Try a chuck steak or a chuck roast. Much cheaper and have a great flavor. Cook the chuck in the oven with onion slices and orange slices on top. It will tenderize it and keep it juicy.
Any steak you over cook is going to be dry.
A rib-eye, porterhouse or t-bone should never go beyond medium rare.

Sorry but the definition of well done = DRY! Especially if you bake it. You can grill, broil, charcoal broil or pan-fry a nice steak like rib-eye to MEDIUM WELL and have it be a little bit juicy but, if you really like well done please do not waste your money on steak, buy ground beef. If you don't get the extra lean it will actually be a bit juicy even if it is cooked well done.

I've never tried this with steak, but when I make cakes, I put a pan full of water on the shelf below the cake and it makes the air humid in the oven, making the cake more moist. You could also marinate the steak before cooking and/or add it while cooking.

I've never eaten a well done steak that wasn't dry. Well done just equals dry, I think.
Try med well. It may still be a little dry, but less dry than well done.
I just think well done ruins steak. I never cook them any more than med. There is so much more flavor in a med steak.

I'm not really sure, but I came across this article that said if you like your steaks well done, don't sear them because it will cause them to dry out even more.

Broil the steaks instead of baking them. Or use a stove-top grill pan.

If you marinate it before hand, or even put on some ready made bottled marinate that you can just shove on it before you put it in the oven then it should be softer... thats what i do. Also if you cook it to high then the meat can toughen up, that why roasts have such a nice texture.

eat it med or med rare theh it will not be dry. if you want it well done cook your shoe it will taste the same.
