QUICK AND EASY TUNA FISH CASSEROLE
1 or 2 cans tuna
1 tsp garlic salt to taste
just a shake of salt
just a shake of pepper
a little over 1/2 cup of Italian bread crumbs
3/4 cup Ranch dressing
1/2 bag of egg noodles
Boil egg noodles until done; drain.
Drain water from tuna and place in a bowl. Add remaining ingredients.
Be sure mixture has a creamy enoughconsistency, and taste to see if enough garlic salt has been added. If mixture is too creamy, add more bread crumbs, and vice-versa (Ranch Dressing).
Stir in cooked egg noodles and serve immediately or place a couple slices of cheese (of your choice) on top and bake in the oven JUST for a couple minutes until the cheese melts.
Overcooking will make tuna dry.
QUICK AND EASY CHICKEN-SHRIMP TERIYAKI
1/4 lb. med. shrimp, shelled
1 1/2 c. cooked chicken pieces (equals the meat of approximately 2 breasts)
1 sm. can mushrooms, drained or 1/2 c. sliced fresh mushrooms
1/3 c. bottled teriyaki sauce
1/4 c. white or rose wine
Black pepper, to taste
In a medium non-stick skillet heat teriyaki sauce and wine on medium heat until liquid begins to bubble. Add raw shrimp, chicken and mushrooms, stirring quickly until shrimp are pink on all sides. Sprinkle with pepper and continue stirring another few minutes, to be sure chicken pieces are heated through. Serve over cooked rice or noodles. Recipe can be multiplied by as many people.
Serves 1.
QUICK AND EASY MANICOTTI
1 lb. Ricotta cheese
1 egg
1 1/2 c. grated Mozzarella cheese
1/4 c. Parmesan cheese
1/2 tsp. dried parsley flakes
1/2 tsp. salt
2 or 3 drops hot sauce
1 (6 oz.) pkg. manicotti shells
Beat together Ricotta cheese and egg until smooth. Add Mozzarella, Parmesan, parsley, salt and hot sauce. Mix well. Fill manicotti tubes UNCOOKED. Spread some sauce in 13 x 9 inch dish. Add manicotti, single layer. Top with remaining sauce, cover and bake at 350 degrees for 45 minutes to 1 hour.
SAUCE:
For and easy, quick dinner, use any jar spaghetti sauce; add seasoned cooked hamburger meat.

Get a Greek, Italian, Indian or Mexican cookbook - all of these cultures have quick simple meals that can be prepared either from scratch or with easy to locate canned/frozen items from any local market. They are also easily searched on the web but I find books easier to mark up and co-ordinate. the benefit of these cultures is it is easy to incorporate a good variety of fresh seasonal vegetables and salads with every meal and in the winter make a large soup on Saturday that you can re-season to meet each meal choice for a warming treat. QUICK & EASY CREAMY MUSHROOM ALFREDO
Prep Time: 15 minutes
Start to Finish: 30 minutes
3 c. Rigatoni pasta
2 tbsp. butter or margarine
4 c. sliced fresh mushrooms (optional)
1 clove garlic, finely chopped
1 pkg. cream cheese, cut into small cubes
2/3 c. milk
salt and pepper to taste
4 tbsp. grated Parmesan cheese
2 tbsp. chopped fresh parsley or 1/4 tsp. dried parsley
Cook pasta according to direction on the box. Drain. Meanwhile, in a large skillet over medium-high heat, melt the butter. Add the mushrooms and garlic. Cook 5 minutes, stirring occasionally. Reduce the heat to medium. Add cream cheese, milk and salt. Stir until the cheese melts and the sauce is smooth. Toss the hot pasta, sauce, the parsley, and 2 tbsp. of the Parmesan cheese.Season with pepper. Place on a platter and sprinkle with the remaining Parmesan cheese.

Here's one that is kid freindly...i just made this for supper...it is really quick to put together and it is good..
TATER TOT CASSEROLE
1 (32-ounce) package frozen potato rounds
1 (16 ounce) container sour cream
1 cup shredded Cheddar cheese
1 (10.75 ounce) can condensed cream of mushroom soup
1 (6 ounce) can French-fried onions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch-baking dish. Arrange tater tots in the prepared baking dish. In a mixing bowl, combine sour cream, cheese, and mushroom soup.
Pour this mixture over the tater tots. Sprinkle onions over the top of the casserole. Bake in the 350 degrees F (175 degrees C) oven for 45 to 60 minutes
Here's one more: I like quick and easy too. I changed this a bit from the receipe below....I only used 1/2 package of everything.. the original recipe below seemed a little spicy for us..I use the 1/2 cup water though...
To Die for Pot Roast
Ingredients
1 beef roast, any cut, to fit size of crock pot
1 Pkg. Hidden Valley Ranch Dressing mix
1 pkg. brown gravy mix
1 pkg. Italian Dressing mix
1/2 C. water
Combine mixes well and sprinkle over roast in pot. Pour water into bottom of pot. Cook on low for 6-7 hours.

I make this vegetable medly and we just recently started making pizza with it. Take a boboli crust or any other pizza crust. You are going to slice up some zucchini, squash, tomatoes and mushrooms, onions, different colored peppers (you can add broccoli or any other kind of veggie) combine the chopped up veggies in a pan for grill (no holes in bottom) or you can cook it on the stove. mix in some extra virgin olive oil so it does not stick and some italian dressing and if you choose you can add some spices. Cook thouroughly on grill or stove until veggies are soft. Take your pie crust and brush some extra virgin olive oil on it, put veggies over the pizza and bake it as per the pie crust directions. You can add cheese too if you wish. It is a big favorite in my house.

How about the fastest quiche recipe in the world ??
Preheat the oven to 375
spray or rub a large pie tin with oil,gently press a burrito grande sized tortilla into it. Beat 10 eggs with 1/2 cup of sour cream for a light fluffy quiche, or with a cup of heavy cream for a dense quiche. pick one cup each of diced cheese,
meat,and veggies - think what herbs/spices compliment and whisk into egg mix. Fold solids into egg mixture and then pour into tortilla crust. Bake 25 -45 mins for a fluffy quiche
( the temp of the filling will determine cook time) is done when center raises and is firm to the touch...the dense quiche is done when the center is firm 35-60 mins
. Serve with salad of your choice

italian chicken gizzard
6 T olive oil
4 garlic toe
2 pd chicken gizzard
1 c water
1 c marsala wine
1 c tomado gravy
1 slice lemon
salt & pepper
saute the gizzards in batches
in loive oil-garlic- in pot add water- and wine- simmer covered then take off lid after 1/1/2 hour add tomado gravy sale & pepper slice lemon cook another 45 min#
