i was a marine and went in as a 0311 rifleman, Went to STA platoon (scout sniper) after being in fleet. You have to be selected to even go through the trials to be picked for that.
there are MOS' that are not 0311.
the 0311 designates a rifleman. there are other 03 MOs' the 03 designates infantry and the last 2 numbers designate specific job. There is weapons company billets such as machine gunners, mortarmen, dragons platoons, TOW, and so on and so on.
The day of an infantrymen while not at war is Drilling (marching) PT Physical fitness, weapons cleaning (always cleaning weapons, classes on tactics training on tactics. you go to the field and do training.
In war you put it all into practie

Every Marine is a rifleman. An infantryman is the backbone of the Corps. In war zones you'll go out on patrol looking for bad guys, be sent on a mission (search and destroy or other such things) or hang in the rear with the gear (where you can PT and clean that weapon).
Next best thing??? MP, sniper.

Hey dude first of all I find it very hard to believe that there isnt any openings for 0311 especially right now so you may want to double check that, however any MOS code starting with 03 is gonna be just as fun as 0311. Check out the LAV crewman :)

An infantry rifleman spends most of his time at war or getting ready to go to war. Expect to spend a lot of time on physical conditioning and use of small arms. Learning how to survive and fight in all types of environments is also a big part of training. Any combat arms member at this point in time can expect to see active service in a war zone.

The riflemen employ the M16A4 service rifle,the M4 carbine, the M203 grenade launcher, and the M249 squad automatic weapon (SAW). Riflemen are the primary scouts, assault troops, and close combat forces available to the MAGTF. They are the foundation of the Marine infantry organization, and as such are the nucleus of the fire team in the rifle squad, the scout team in the LAR squad, scout-snipers in the infantry battalion, and reconnaissance or assault team in the reconnaissance units. Noncommissioned officers are assigned as fire team leaders, scout team leaders, rifle squad leaders, or rifle platoon guides.
Basically still called a grunt!

That is your basic infantry. You go out on patrols and are on the front lines. You learn how to shoot and go to infantry school.
The next best thing if it's unavailable (which it very well could be) is combat engineer.
