Peach Cobbler

1 c. milk
1 c. self-rising flour
1 c. granulated sugar
1 stick butter
1 egg
1 tsp. vanilla
1 med.-sized can sliced peaches

Melt butter over low heat; add milk, sugar and vanilla. Mix well. Add egg and beat well. With electric mixer, mix in flour. Mix for about 2 minutes. When all ingredients are thickened, add peaches and peach juice; stir with fork, turning peaches in mixture, 3 or 4 times. Bake in a 9 inch baking dish at 350 degrees until golden brown on top.

Ok....so this isnt exaclty cobbler...but it rocks and is too easy!

Peach Dump Cake

* 2 (16 ounce) cans peaches in heavy syrup
* 1 (18.25 ounce) package yellow cake mix
* 1 cup butter
* 1/2 teaspoon ground cinnamon, or to taste

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C).
2. Empty peaches into the bottom of one 9x13 inch pan. Cut butter into cake mix until is looks like sand, place on top of cake. Sprinkle top with cinnamon.
3. Bake at 375 degrees F (190 degrees C) for 45 minutes.


If you are using fresh peaches...simmer them in some water, sugar and add a couple of cinnamon sticks. Simmer till soft.

Peach Cobbler
Batter
1/2 cup melted butter
1 cup flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup room temperature milk
1 room temperature egg
Filling
1 (28 ounce) can sliced peaches, drained
1 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Melt butter in a 9 x 13 inch pan.
Mix together flour, sugar, baking powder& salt.
Stir in milk& egg.
Pour evenly over melted butter.
Combine peaches, sugar& spices and spread over batter. DO NOT STIR!
Bake 35-45 minutes at 350 degrees until batter comes to the top and is golden brown.
Serve warm with ice cream.

Nana's Warm Peach Cobbler


Ingredients
Nana's Apple Cake Mix®
1/2 cup (1 stick) melted butter
3/4 cup water
3 Tbsp. flour
3 oz. pkg. strawberry Jell-O®
2 Tbsp. sugar
16 oz. pkg. frozen peaches, thawed

Directions
Combine first 2 ingredients until coarse crumbs form; set aside. Whisk water and flour together in sauce pan; stir until mixture comes to full boil. Add remaining ingredients; mix well. Pour into greased 8 x 8 baking pan; sprinkle top with crumb mixture. Bake at 350° for 45-50 minutes. Makes about 8 servings.

Old Fashion Peach Cobbler

INGREDIENTS
2 1/2 cups all-purpose flour
3 tablespoons white sugar
1 teaspoon salt
1 cup shortening
1 egg
1/4 cup cold water

3 pounds fresh peaches - peeled, pitted, and sliced
1/4 cup lemon juice
3/4 cup orange juice
1/2 cup butter
2 cups white sugar
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 tablespoon cornstarch

1 tablespoon white sugar
1 tablespoon butter, melted
DIRECTIONS
In a medium bowl, sift together the flour, 3 tablespoons sugar, and salt. Work in the shortening with a pastry blender until the mixture resembles coarse crumbs. In a small bowl, whisk together the egg and cold water. Sprinkle over flour mixture, and work with hands to form dough into a ball. Chill 30 minutes.
Preheat oven to 350 degrees F (175 degrees C). Roll out half of dough to 1/8 inch thickness. Place in a 9x13 inch baking dish, covering bottom and halfway up sides. Bake for 20 minutes, or until golden brown.
In a large saucepan, mix the peaches, lemon juice, and orange juice. Add 1/2 cup butter, and cook over medium-low heat until butter is melted. In a mixing bowl, stir together 2 cups sugar, nutmeg, cinnamon, and cornstarch; mix into peach mixture. Remove from heat, and pour into baked crust.
Roll remaining dough to a thickness of 1/4 inch. Cut into half-inch-wide strips. Weave strips into a lattice over peaches. Sprinkle with 1 tablespoon sugar, and drizzle with 1 tablespoon melted butter.
Bake in preheated oven for 35 to 40 minutes, or until top crust is golden brown.
