EASY CORN ON THE GRILL
2 ears of corn for each person
1 tablespoon butter for each ear of corn
3 tablespoons crushed ice for each ear of corn
aluminum foil or foil pockets
salt, to taste
Husk corn and rinse.
Cut a rectangle of aluminum foil large enough to wrap each corn cob twice. Place each corn in the center of foil with the shiny side in. Add 3 tablespoons crushed ice and 1 tablespoon butter.
It's important to wrap the corn with the aluminum foil so that the edges of the foil are crimped and sealed securely so that as the ice melts, the liquid will be retained in the foil pocket. Make an envelope with the foil and double fold the edges, then place the seams on the top.
Place the corn pockets on the hot grill and cook for 30 minutes or so, turning over half way through cooking time. (Length of cooking time will vary depending on the tenderness, variety and age of the corn - some types of corn may be done in half the time).
GRILLED VEGETABLE KABOBS
2 zucchini, cut into 2" chunks
2 yellow squash, cut into 2" chunks
8 ounces fresh mushrooms, cleaned
2 red and green bell peppers, cut into 2" chunks
2 medium red onions, cut into wedges
2 ears sweet corn, cut into 2" chunks
16 whole cherry tomatoes
8 ounces teriyaki sauce
Wash vegetables except mushrooms. Brush mushrooms clean. Prepare vegetables according to recipe. Cook corn in boiling water for about 10 minutes. Toss vegetables in teriyaki sauce. Thread vegetables onto skewers. Place on grill over medium-hot heat. Baste occasionally with teriyaki sauce. Grill 20 minutes or until tender.

If you like seafood, get a couple Salmon steaks, they are not that expensive and really taste great grilled. Corn on the cob, soak your corn first in water with the husk on. Place the Corn, husk and all on the grill, turning the cob around about every three minutes. Cook for about 12 minutes. You'll never want to boil corn in water again. Country Style spare ribs are not that expensive and what I do is to boil them in water for about 20 minutes until their done. Pat the ribs dry and place on the grill until browned and then but your Barbecue sauce on them.

Try marinating chicken breasts in Italian dressing overnight. Small roasts can be cooked this way too.
You can grill porkchops ahead and reheat them later in the oven in barbeque sauce. This gives you a quick easy meal for later.
Kebabs might be worth a try too. Some cubed beef, carrots, squash maybe.
You can try just about anything on a grill. And if it stays hot long enough you can get several meals out of one load of charcoal.

Since you're planning on doing the Corn on the Cob, you should try the Southwestern Corn on the Cob. It's got a good amount of spice too it, but not too much, and the flavor is kinda smoky / spicy -- it's very good.
Prep time - 8 mins
Cook time - 35 mins.
1 tsp. cumin, divided
3/4 tsp. chili powder, divided
1/2 tsp. onion salt
3/4 tsp. garlic pepper, divided
1/4 tsp. cayenne pepper, divided
4 ears corn on the cob, husked
3 tbsp. softened butter or margarine
Additional Butter optional
1. Heat grill to medium direct heat. Meanwhile, blend 1/2 teaspoon of the cumin, 1/2 teaspoon of the chili powder, onion salt, 1/2 teaspoon of the garlic pepper and 1/8 teaspoon of the cayenne pepper in a small bowl (I used a salt shaker) Place each ear of corn on a piece of foil (6 inches wider and 4 inches longer than the ear). Place larger ears diagonally on foil.
2. Sprinkle seasoning mixture evenly over corn. Add 1 tablespoon water to each pouch, folding foil to enclose corn and crimping edges to seal, leaving room for expansion.
3. Place corn on grill. Grill, covered, 20 minutes, turning once. Meanwhile, blend butter and remaining 1/2 teaspoon cumin, 1/4 teaspoon chili powder, 1/4 teaspoon garlic pepper and 1/8 teaspoon cayenne. Set aside.
4. Remove corn from packets. Place corn on grill. Brush lightly with butter mixture. Grill, covered, 15 to 25 minutes longer or until tender, turning once or twice and brushing with any remaining butter. Serve with additional butter, if desired.
For an Awesome baked potato, boil the potato in salt water for a short amount of time -- just bring to a boil and let it boil for 5 minutes. Then put the potato on a sheet of foil, and drizzle with olive oil & salt. Fold the potato up into a nice packet, place on grill & cook for about 20-30 minutes, turning once.

Shrimp Kabobs are good too with a Honey Garlic Sauce.
And of coarse you can Grill a Stuffed Fish with Onions,Garlic,Mushrooms,Lemon slices or Juice or can also use both slices and juice...YUMMY
Stuffed Peppers,
Stuffed Mushrooms,
Peaches,Either with Chocolate melt or once they are softened top with Granola and brown sugar and butter place back on the grill to keep warm...Serve with Ice Cream..
