It can take about two days. A CBC, which is
complete blood count it test measures the following:
The number of red blood cells (RBCs)
The number of white blood cells (WBCs)
The total amount of hemoglobin in the blood
The fraction of the blood composed of red blood cells (hematocrit)
The mean corpuscular volume (MCV) -- the size of the red blood cells
CBC also includes information about the red blood cells that is calculated from the other measurements:
MCH (mean corpuscular hemoglobin)
MCHC (mean corpuscular hemoglobin concentration)
The platelet count is also usually included in the CBC.

The blood work depends on the symptoms presented. If no symptoms are present, depends on the age, sex, food habits, smoking or not, exercise history, family history etc.,
CBP, ESR, Random Blood Sugar are the minimum and thyroid tests, Liver Function Tests, RA Factor Tests, Glucose Tolerance tests etc., are all specialised and will be asked depending on the preliminary findings.

There are *tons* of tests, much to many to list here.
Among them are cholesterol, liver function, electrolytes, various enzymes that point to proper organ function, tests for antibodies to various diseases, white blood cell count (if elevated you are fighting off an infection), the list goes on and on...
How long it takes to get the results depends on the test being done, usually within 1-3 days.

They check whatever the doctor orders. It takes about a week.
Usually a complete blood count (CBC) is done. That link will tell you what's checked with a CBC
