If you want super tender pork chops, here is what you do.
The key to baked pork is to put a little water in the pan, and put tin foil over it in a 375 degree oven usually, it makes the meat super tender instead of hard and chewy, you can add spices or sauces but a little water will go a long way in making tender meat.
I mix it up and make my own sauces. Good luck!!

I slow bake mine (I buy the really thick ones) and dabble (1/2 cup) olive oil over them and soy sauce (1/2 cup) and cut up a yellow onion I either add kosher salt + pepper lightly to the sides or Montreal seasoning -
I bake at 300 for close to 2-3.5 hours turning and adding a little water - so there is juice. Don't over cook so if they are thin pork chops closer to 1.5-2.5 hours let the onions carmelize (sp) and it should be lovely with mashed or a baked or riced potato.
The au ju from the pan works well over the chop or potato
keep it hydrated with a trace of water while you bake.

I'll start with my daughter in law"s recipe. Brown chops in frypan both sides after salt and peppering them. Make up some stuffing, easiest is Stove Top for pork. Take a meatloaf pan &put one chop standing up & then put stuffing then another chop and stuffing until both are used up. Cover with foil,bake 325 for about half hour. Remove foil anf bake about 15 more min. Put a fork into the pork if tender lessen time of cooking the 2nd time. I also put chops in lrg baking pan.Lay them down and salt,pepper and garlic powder them. Use either spaghetti sauce, salsa,or nothing.Bake them covered for 20min and uncover for 15-20min@350.Serve with pasta or noodles or rice.

I make them by putting the thawed pork chops in a cake pan (9 inch works best) and putting a can of campbell's cream of mushroom soup over them and then baking for half an hour at 350.

For either, try making an apricot glaze. All you do is mix 1 packet of onion soup mix with 1 cup of either Italian or Russian salad dressing and 1 cup of apricot preserves. Then pour that over your chicken or pork chops and bake. I bet you could buy apple preserves also and do the same thing... that might taste even better on pork chops! Its yummy!!! The onion soup and dressing take away a lot of the sweetness of the apricots so its not sickeningly sweet.

Chops.
I would suggest you put them under the grill, about 8" from the top element and grill for about 7 minutes each side. (3/4"-1" thick)
Add a few more minutes if they are thicker.
Use a rack in the roasting pan to catch the fat as it drips out.
