Even tho most b'ars are tough an' kinda greasy 'cause of all the fat, if you get one young enuff, the few times I played 'cannibal', it was mighty tasty eatin', especially in Bruin Mulligan Stew! ! !

Actually, It's great tasting..Even better marinated and cooked slowly and smoked on a charcoal grill with a little Mesquite wood on the coals. It has a tendency at times to be a tad tougher than beef, but isn't wild tasting at all to me.Note**** It helps to cut the meat cross grained after cooking. The marinade takes care of the tenderizing and is only used for that, not for masking any wild game flavor. As a Hunter I eat almost everything I bag so it doesn't get wasted. With the exception of "Ostrich and Ostrich Eggs" I haven't been grossed out or turned off by any wild meat I've eaten yet.
Maybe these are acquired tastes......lol

And NO, It doesn't taste like chicken.....(smile)

Bear meat is great!!!!!!!!!!!!----If you shoot it at the right time. A fall bear is strong flavored and real fat-they are really pigging out trying to get ready for winter. If you get a spring bear, they are really good. Excellent if you can barbeque them in a pit. If not, just cook them real slow. Had some in Alaska that was out of this world!

The meat is Greasy. Slow cooking in a smoker or grill allows the grease to drip from the meat, must be slow cooked. Or it is great to boil for a long time allowing the water to boil off several times like for all day & night then add other ingredents for Bear Stew.

It depends on the age of the bear, and it's diet. Here on the coast, we have berry eaters. because of this, it is a little sweet, and it's texture resembles corned beef because it's kinda stringy. I love it smoked the most into jerky. The sweetness really plays up the flavor. I have tried bear from Alaska that live off of fish, and I really hated the taste. It was extremely gamey and over powering.

The only one who can ruin it is the cook*... If it is prepared and cooked properly it is fantastic*... Make sure to remove all fat deposited on the meat before cooking*...

my boyfriend brings home black bear and it is very delicious. Not very gamey... he actually has a hunt coming up in a week.

Different texture but very delicious. Still prefer grass fed buffalo over it though.
