Could it be an old greek word, as the word zephyr, the name of another car from a few years ago(made by ford car company in the 1960 s.

No it is an invented word to describe Fords engine with variable valve timing

It is a made-up word Ford invented when they were prevented (by Lancia I believe) from using the name "Zeta" (a Greek letter) for their new engine range in the early 1990s.

ford took zetec from "zeta" the original name for their engine, some company took offence to zeta so they changed it to zetec,

zeta is the 6th letter of the greek alphabet, the engine has 16 valves, maybe something to do with that.

p.s the zetec is not vvt, the later engine "sigma" (zetec-s) made by yamaha is.

Zee - (or Zed in UK english) technology

as in the last letter of the alphabet - stands for final, ultimate, technology

(having driven - and had many problems with - a focus zetec... that's a laugh)
