Of these two, the E510 is the better with image stabilization. Olympus makes good cameras, so if their lens selection is what you want, get the 510.
If you think you will become a serious or commercial photographer, many will say go with Nikon or Canon SLR's instead. If not, don't worry about it.
The larger image sensor in dSLR's will give you such a better photo than you are used to with the compacts or digi-cams, you'll be glad you got it!

You might want to wait for Fugi's new camera to come out. http://blog.scifi.com/tech/ It's a couple of scrolls down from the top of the page. Looks pretty nice and a very nice price tag on it.
