Whenever I have my sister over for dinner I am always careful to cook her fiance something vegetarian so he does not have to eat meat yet when we visit them they do not extend us the same courtesy of cooking us a meal with meat.....
Why is this?

Yeah, my sister still eats meat but not at home - only when she eats out at a restaurant or at someone elses place. So when they come over I usually do two dishes; one meat & one vego (as her fella does not eat meat).
He says that he just does not like the flavour of meat. He will occasionally have an egg & I once busted him eating a cocktail frankfurt (according to him there is no real meat in them) but aside from that he doesn't eat meat.

Well, vegetarians don't eat meat. Non-vegetarians generally eat all kinds of food. If you usually eat meat and vegetables they might think you won't mind skipping the meat sometimes since you are not against eating vegetables. Very few people eat meat only.
There are also other possible reasons. Some vegetarians don't eat meat because they are against killing animals. Such people will not buy meat for guests, simply because it's against their morals.
Some are vegetarians for other reasons, but may be disgusted by meat in their house, might not know how to cook it or might think people don't mind eating vegetarian dishes once in a while.

You do not indicate in your question whether or not your sister still eats meat. If so, it does seem a bit odd that they never make meat dishes when you come over.
However, someone following a true vegetarian lifestyle would not want to cook meats using the same utensils they use for preparing their own foods. The slightest bit of meat fats that might come into contact with their own foods could actually make them ill, depending on how long they've been vegeterian, because their bodies quit producing the enzymes needed to break down the nutrients in meats.
Although a vegeterian can become ill from eating meats, it's highly unlikely that a "meat eater" would become ill from eating a meal that was strictly vegeterian. And a single meal here and there, or even a week or two of meals, shouldn't affect you in any major way.
I'd take this as an opportunity to learn some new, often healthier alternatives to add to my diet.

You're really close to being out of line here.
It's not like they are preparing food you CANNOT OR SHOULD NOT eat.
Would you expect a Jewish or Muslim person to cook pork chops or bacon just for you just because you abstained from serving ham to them at your last party?
Probably not.
Now if there was a MEDICAL reason for you having to eat meat - I would imagine that your sister & partner would be more than happy to oblige. But since you don't indicate that you absolutely MUST eat meat - go ahead and eat the curried cauliflower and enjoy not only a delicous meal - but some excellent company.
And quit trying to stir up muck when you don't need to.

I guess there can be two reasons:
1.If vegetarianism is borne out of religious reasons, then they may not provide any meat at home
2.They just may not know how to make dishes with meat. For regular vegetarians since birth, this will be applicable.
Nonetheless, you could ask your friend as to why he does not return the courtesy (in lighter vein)

For the same reason your jewish and musliom friends won't prepare a nice pork roast when you visit them ~ they don't eat it!
Possibly they don't have expertise in preparing meat meals, or perhaps they don't have the equipment to cook meat.
Vegetarianism, just like religious observance of food taboos, is a lifestyle matter.
It is always going to be easier for you to make a vegetarian (or halal) meal than for them to cook you something they do not eat.
It is about beliefs, not just convenience.

Because those who eat meat can also eat non meat items but vegetarians can only eat non meat items. I personally would not cook meat for a guest..instead I make a delicious meat free meal so EVERYONE can enjoy it.
In my opinion, when they come over, why not make one meal that all of you can enjoy?

Because that is not their lifestyle to eat meat. If you did not eat vegetables, or food other than meat, that would be a different story. If you need meat so bad, bring your own and ask them to heat it up for you. Many people become vegetarian for many different reasons and it is a tough diet to stick to. Have respect for the lifestyle they have chosen. If I chose not to eat meat because I was against animal cruelty, I would feel sick to my stomach if I could smell it coming from my kitchen.

they may not want meat in their house at all. i mean its a great thing that you show condiceration to them as many people dont. but not every one is as courtesy. however a total vegetarian meal isnt so much of a bad thing. we as a country consum too much meat as is. (YES i am a meat eater!)

You don't have a diet that forbids you from eating anything that doesn't have meat. They are cooking you something that you will eat, just as you cook him something that he will eat.
