Almost every week I make this particular dish because me and my man love it so much!
Chicken Parmesan Risotto.
You need: Chicken Breasts cubed (allow up to 150g chicken breast per adult, less for children)
Risotto Rice (arborio or carnaroli rice tends to give the best results)
Olive Oil
One large red onion (or 2 small ones)
1-2 garlic cloves chopped (depending on how strong you want the garlic to be)
70-100g finely grated parmesan (depending on the strength of the cheese and how strong you like it)
Around 1 1/2 pints of chicken stock (I use 2 knorr chicken stock cubes as one makes 3/4 of a pt)
Mixed Herbs (1-2 teaspoons)
Coarse ground black pepper
Dash of cream
Heat the olive oil, fry the cubed chicken for about 5 minutes on a medium heat. Add the mixed herbs and black pepper (go easy on the pepper if doing this for children - it can always be added after serving if you're not sure). Then add the onion and continue for another 2 minutes. Then add the chopped garlic cloves and fry for 1 minute, then add the risotto rice and fry for 1 minute also.
Either using a ladle or pouring from a jug, add a ladle-full of stock to the frying mixture. It will sizzle and then calm down. You want the mixture to be bubbling throughout but not furiously.
Stir the mix until all the liquid you first added is absorbed. Then add another ladle-full. Stir until absorbed, then repeat.
Repeat until the rice is cooked (refer to the packet as times tend to vary from 18-22 minutes). Stirring almost constantly gives you the best results as it helps to cook the risotto evenly.
When the rice is just cooked (a bit of bite left but not hard) add the parmesan and stir until melted. Then add just the smallest dash of cream (I use single cream) to even out the flavour. If the mixture seems a bit wet/ too liquidy, turn up the heat and stir until it's reduced.
The perfect risotto should move on the plate as you spoon it on. Add black pepper if not already added.
Ta da! Done, very cheap, feeds many and tastes great!

Its the other way around for me. My husband is not fussy at all he will eat anything i make for him. He wants me to make alot of american foods like turkey, roast beef, fried chicken. My kids (young teens), well my daughter anyway is VERY picky.
My personal favorite is an Egyptian food. They call it "mashy" Seasoned uncooked rice that has been soaked in pureed tomatoes and herbs & spices. Sorry, I dont know what herbs & spices.Then they stuff it in a cored out (green) zuccini and lay them all in a large pot. They also roll some rice in a steamed white grape leaves and lay all of those in a separate large pot on top of extra leaves that cover the bottom. They slow cook these on low heat for a few hours. Dont worry if the rice is undercooked or overcooked, the pureed tomatoes and spices and heat altogether cooks it. VERY healthy & DELICIOUS!

OH, the rice has to be the small round rice, "Calrose"

Bunny Chows !
For those who do not know what Bunny Chows are, here's how:
Simply hollow out half a fresh white bread, or 1/4 loaf so that you have the hollow crust on one side and the bread inner on the other.
Now fill the crust, (not too hollow), with curried meat, (mutton or beef cubes). Usually curry is a mixture of meat, potatoes, onion, cooked carrots, and naturally the curry spice.
Once the bread crust is filled, top it with a portion of the bread inner and serve with sambals. (Cubed tomato+onion salad)
It is eaten with the hands, not with utensils.
A bit messy but so nice.
By the way, the curry need not be strong, especially with fussy men and little children.

Disregarding restaurant meals with a three figure price tag that are now only a vague memory, I would opt for a curry at the Jalabad in Ilford. Sadly I only enjoy these on the rare occasions that I am passing through Ilford on the way to London.

I don't really have a favourite meal because i have such a varied love for all food!! It is too easy to always stick with what is 'safe' so i would suggest just picking you favourite type of meat and looking at recipies that incorporate that meat, you are bound to find something yummy!!

MEXICAN SPAGHETTI
1 lb. ground beef
1/2 tsp. salt
1 (15 oz.) can tomato sauce
1 1/2 cans (4 1/2 c.) water
2 (1 1/4 oz.) pkg. taco mix
2 tbsp. minced onions
8 oz. spaghetti
1/2 c. shredded Cheddar cheese
Brown ground beef, add salt, tomato sauce, water, taco mix and onion. Bring to a boil, add spaghetti. Simmer covered for 25-30 minutes or until spaghetti is tender. Stir frequently. Serves 6.

One of my favorite things to have for dinner is an egg sandwich, and my other favorite is a chicken dish that my mom got the recipe for from a friend. We call it Party Chicken and make when we can get the chance to do so.

I love pasta bake wiv a creamy tomato sauce and loads of cheese on top with crusty garlic bread. And a yummy sunday dinner wiv roast chicken crunchy roast potatoes loads of gravy veg and yorkies. Im starving now! xxxx
