If it is white flour and is kept at normal home temperatures, it will last for several years. If it is a whole grain flour, the fats in the germ can go rancid in 6 months or so. The nose knows when fats are rancid. Whole wheat flour is best kept under refrigeration if it will not be used in a few months - in fact it is best kept under refrigeration even if will be used in a few months because the fats will stay fresher. If kept in a in a freezer, whole grain flour can be kept for a year or more. This, of course, assumes as you stated - in an air tight and moisture proof container.

I've kept flour for a very long time. Well over a year. But I also suggest that you put it in the freezer. Flour can attract little critters...even if in an airtight seal. Those little creatures are pretty clever.

Pretty much forever. Just keep it in a sealed container away from light and heat.
