I'm assuming you are looking for a recipe for enchaladas and not a receipt. LOL! Here's a quick and easy one:
Brown some hamburg add 2 cloves minced garlic. Add a package of old el paso enchalada seasoning and add appropriate amount of water according to package directions. Fill corn tortillas with 2 tbsp mexican grated cheese (cheddar will work if you can't find the mexican blend) and 2 tbsp of the meat mixture. Roll and place in a baking pan. Add a can of Enchalada sauce over the top of the enchaladas and add some more of the mexican cheese. Sprinkle with slices of black olives and bake until cheese is golden and bubbly. Enjoy.

EASY OLD FASHIONED ENCHILADAS
2 pounds hamburger
1 onion
1 teaspoon garlic powder
2 packs taco seasoning mix
1/2 cup water
1 can of peas
1 can new potatoes (diced)
1 8 oz can enchilada sauce
corn or flour tortillas (your preference)
shredded cheese
Brown hamburger with diced onion, drain and rinse with hot water in a colander to remove grease. Add taco seasoning mix, garlic, drained peas, and diced potatoes. Add water and can of enchilada sauce. Stir all ingredients together and let simmer while you prepare the casserole dish.
Spray a large cake pan with oil. Cover the bottom with tortilla shells. Spread 1/2 the hamburger mixture, top with as much cheese as you want. Add a layer of tortilla shells on top, the remaining hamburger mixture, and top with cheese.
Bake at 350F for about 45 minutes.

ENCHILADAS
3 lbs. of chicken breast, boiled, cut into small pieces.
40 soft shells (aztec brand doesn't hold up well!)
2 family sized cans of tomato sauce
2 large cans enchilada sauce
1 large container of sour cream
1 large family sized can of cream of mushroom soup
2 packets of taco seasoning mix
2 bell peppers, green, red, or yellow
1 medium onion
1 tbsp. cumin
1 jar of your favorite salsa
1 package shredded taco cheese
salt & pepper to taste
This recipe makes a LARGE recipe. You can scale it down by cutting ingredients in half.
Combine the chicken/or other meat, taco mix, onion, bell pepper, cumin, and salt & pepper to taste. Also add in the mushroom soup. Cook over heat till you have a nice creamy mix & taste.
10-15 minutes before you are done cooking the above mixture, add the sour cream and the salsa. Mix well and set aside.
Combine 2 lg. can tomato sauce and 2 lg. can enchilada sauce in a bowl. Place 1/2 of this mixture in another bowl.
Spread some of the red sauce in bottom of pan and dip the shells in the sauce. Place the shells on pan and fill with mixture, roll tight, place in pan.
Save some red sauce for the top. Fill pan and top with remaining sauce and taco cheese, cover with foil.
Heat 20-30 mins. at 350 until cheese is melted and heated through.

Sour Cream Chicken Enchiladas
INGREDIENTS:
12 corn tortillas
4 cups green chile sauce, recipe below
3 cups cooked minced chicken
1 pound shredded Monterey Jack cheese
1/4 cup minced onion
1 to 2 cups sour cream
salt to taste
green chile sauce
PREPARATION:
Heat tortillas on griddle or in microwave or heat in oil until flexible; cover with a towel and keep warm. Make green chile sauce, below. Mix one cup chile sauce with the minced chicken. Put 1/4 cup of the mixture on each tortilla and roll up.
Place tortilla rolls, seam-side down, in a baking dish, cover enchiladas with shredded cheese and add onion if desired. Pour remaining sauce over enchiladas and bake at 350° for about 20 minutes. Top with sour cream and return to oven for 10 minutes or until all is hot. Serve immediately.
Green Chile Sauce
1/4 cup olive oil 1 clove garlic, minced 1/2 cup minced onion 1 tablespoon flour 1 cup water 1 cup chopped green chiles salt to taste
Saute garlic and onion in oil in a heavy saucepan. Blend in flour; add water and green chile and mix well. Add salt. Bring to a boil and simmer, stirring frequently for 5 minutes.
