I'd wrap the scallops in bacon, or better, prosciutto, and sear them. Make a lemon butter sauce to pour over them. Serve with risotto and white wine.

Scallops Creole with Rice

INGREDIENTS:
1 can (approximately 15 ounces) stewed tomatoes
12 to 16 ounces sea scallops, fresh or frozen and thawed
1/2 cup finely chopped onion
1/4 cup finely chopped green bell pepper
2 tablespoons flour
1/4 cup water
salt and pepper
hot cooked rice
PREPARATION:
In a medium saucepan combine stewed tomatoes, scallops, onion, and green pepper; bring to a boil. Reduce heat; simmer for 5 minutes. Blend flour with water; stir until smooth. Add flour mixture to the hot tomato mixture and continue cooking until thickened, stirring constantly.

Scallops are NOT as the first answerer had suggested , potatoes.
Scallops are fish? or something along those lines. Im not quite sure the right name.
However I am sure scallops cooked in garlic and butter or parsley and lemon on medium heat till brown taste good.
I would suggest picking a main dish recipe for your scalops in order to not have to have too many thing.
I have included a great site with LOTS of recipes.

SHRIMP AND SCALLOP SCAMPI OVER
LINGUINI
2 lbs. fresh, peeled and deveined, cooked shrimp
1 1/2 lbs. sm. bay scallops
2 lbs. linguini pasta, cooked and drained
8 tbsp. butter
1 med. onion, chopped
1 tbsp. minced garlic
1 tsp. chopped parsley
1 tsp. crushed red pepper (more or less to taste)
Grated Parmesan or Romano cheese
Cook and drain linguini. Keep warm. Melt butter in large no-stick fry or saucepan. Add onion, saute for about 3 minutes. Add garlic, parsley and crushed red pepper, stir and add scallops, stirring constantly for 3 minutes until scallops are done (will turn from opaque to white).

Perhaps some sort of pasta-maybe alfredo. A few vegetables, asparagus/broccoli. You could also have some garlic toast.
Dessert could be a light/fruity dessert like berries and angel food cake.
That's just my thought though. I hope whatever you decide to do, that you have a great dinner :)

Whatever you want really I would prefer steak or something to that effect. Or if you really dont want steak have porkchops thats always good.
