you don't have to make the sauce, but it's super yummy.
Crab Cakes with Lemon-Dill Sauce
Crab Cakes:
3 tablespoons butter
1 green onion, finely chopped
2 tablespoons finely chopped red bell pepper
1 garlic clove, minced
3 tablespoons heavy cream
1 tablespoon Dijon mustard
1 egg
1/2 teaspoon minced fresh parsley
Cayenne pepper
1 cup bread crumbs
1/4 cup grated Parmesan
1 pound white or claw crabmeat, picked free of any bits of shell
2 tablespoons vegetable oil
To prepare the crab cakes, melt 1 tablespoon of butter in a heavy skillet over medium heat. Saute the onion, bell pepper, and garlic until the pepper is limp, approximately 3 minutes. Add the cream, mustard, 1 egg, parsley, cayenne pepper and 1/2 cup bread crumbs, to taste, and mix well. Gently fold in the crabmeat.
Form the mixture into 8 patties, about 1/2-inch thick. In a mixing bowl, combine the remaining 1/2 cup of bread crumbs with the Parmesan. Pat this topping onto both sides of the patties. Refrigerate until firm, about 2 hours.
Using a skillet, combine the oil and remaining 2 tablespoons of butter. Saute the crab cakes in the hot oil-butter mixture for approximately 3 minutes on each side or until golden brown. These crab cakes can also be baked for 7 to 10 minutes in a 400 degree F oven.
To serve, spoon a dollop of the lemon dill sauce along side each crab cake.
Lemon Dill Sauce:
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons chopped fresh dill leaves
1 tablespoon chopped fresh parsley leaves
1 tablespoon grated lemon zest
2 teaspoons fresh lemon juice
1 garlic clove, minced
To make the sauce, combine all of the ingredients in a bowl and stir well. Refrigerate until chilled. The sauce will thicken as it chills.

SPINACH CRAB DIP
1 1/2 packages Knorr vegetable soup
1 1/16 cups (250 ml) light sour cream
7/8 cup (125 ml) light cream cheese
1/2 cup (125 ml) Miracle Whip
1/4 tsp garlic powder
2 tbsp liquid honey
1 tbsp lemon juice
3/4 pound (330 g) shredded real or imitation crab meat
1/2 cup chopped green onions
1 small can of water chestnuts
2 packages frozen chopped spinach
assorted crackers or bread
Mix first 7 ingredients together until smooth.
Add crab meat, chopped green onions, and chopped water chestnuts.
Cook frozen spinach with salt to taste. Drain well.
Mix all ingredients together.
Refrigerate 3 hours before serving with bread or crackers.

Make an 'english muffin' warm ... put crab meat on the 'bottom' then add cheese and some 'hollandaise sauce' ... butter the other half and serve beside it. You can have this for ANY meal ... it's TOTALLY DELICIOUS and incredibly easy to do ...

Crab Meat Dumplings
6 ounces of canned crab meat, finely chopped
Two (3 oz.) pkgs. cream cheese, softened
1/2 teaspoon of salt
1/4 teaspoon of garlic powder
1/4 teaspoon of tarragon
40 wonton skins
1 egg, slightly beaten
Vegetable oil
Mix chopped crab meat, cream cheese, salt, garlic powder and tarragon. Brush wonton skin with egg. Place heaping teaspoonful of crab meat mixture in center of wonton skin. (Cover remaining skins with dampened towel to keep them pliable.) Top with another wonton skin; press edges to seal. Brush dab of egg on center of each side of puff. Make a pleat on each edge, pressing to seal. Repeat with remaining wonton skins. (Cover dumplings with dampened towel or plastic wrap to keep them from drying out.) Heat vegetable oil in wok or deep frying pan to 350ºF. Fry 4 to 5 dumplings at a time until golden brown, turning 2 or 3 times about 2 minutes. Drain on paper towel. Serve with plum sauce. Makes 20 appetizers.

Use tri-colored pasta rotini, add crab, diced onion, green pepper, celery and broccoli florets and stir in Miracle Whip
