You don't have to have carbs or fat at every meal, but you must have protein. When I say protein, I am referring to high quality protein derived from animal sources. Soy protein, tofu and bean curd have their place, but for getting bigger and stronger, the only protein you need to be concerned with are those found in whey, casein (cottage cheese), eggs, beef, poultry, and fish.
High Protein Foods:
Whey protein
Eggs
Egg whites
Chicken breasts
Turkey Breasts
Lean Beef
Fish (tuna, salmon)
Protein bar
Soy protein Isolate
High Carbohydrate Foods :
Potatoes (baked, fries, hash browns)
Sweet Potatoes, yams
Oatmeal, cream of wheat, cream of rice rice
Beans
Any green leafy vegetable
Bread
Pasta
All cereals (hot or cold)
Healthy Nutrition Fats :
Olive oil
Sunflower oil
Safflower oil
Flaxseed oil
Walnuts
Avocados
to drink stick with milks and protein shakes, but not necessarily those ones at GNC (for body builders and stuff). here's a great recipe:
Barbi's Legendary "Weight-Gain Drink" recipe
1 cup whole milk
1 packet Carnation Instant Breakfast (Vanilla)
2 Tbsp of Carnation evaporated milk
2 Tbsp of Strawberry or Chocolate Quik
It is much better to mix it up in advance, refrigerate and let the foam settle out, then you aren't trying to drink unnecessary foam. The above recipe is 410 calories. It isn't much "thicker" than drinking regular milk. You can add more ingredients to get more calories. To boost protein/calories add 1/2 cup of **dry** powdered milk. (This doesn't add much volume compared to powdered milk that has already been mixed with water.) This will make the drink "thicker". The powdered milk adds 80 calories. I found that it wasn't necessary to add any extras as it makes it thicker and more “shake” like (which I don’t like), so I use the above formula with no additives

Anything with protein. It depends on if you want to gain healthy weight, or just gain weight. If you want to do it the healthy way, proteins are great, they'll build muscle and not just fat. Lean red meats, chicken, turkey, (any of these cooked in olive oil is an added bonus) nuts, eggs, oatmeal, lowfat cheeses & yogurts... smoothies made with lowfat milk, yogurt, and any fruit, that kind of thing. Just get as much protein as you can with as little saturated fat. If you're just wanting food that will make you gain weight- anything fried, anything with high saturated fats (& trans fats), anything that's mostly carbohydrates like sodas or juices... candy... ice cream... foods with high calories and little else of any nutritional value. Hope this helps~

Meats, pastas, bread, rice, cheese, basically anything with lots of carbs and saturated fats i.e.: cakes and cookies.
For drinks try soda and milk.
