Since ancient times doves and pigeons have been considered a symbol of fertility, love and purity. Doves and pigeons are monogamous, (they mate for life) choosing their mate when they are young and only picking a new mate in the circumstances of death or seperation. This makes them very appropriate for a marriage ceremony. They are also known for their loving ways toward each other, preening and feeding each other and "billing" (pigeon kissing). Like the ideal married couple, they equally share the responsibility of rearing young . Many people consider the sight of a flock of doves circling heavenward into the sky to be very touching and beautiful for a wedding.

(As an added note, the doves that dove release businesses use are actually not doves, they are white homing pigeons that have been trained to return home after they are released. Unlike pigeons, domestic doves are weak fliers, landing on telephone poles and trees when they are released and thus becoming a lovely meal for birds of prey).

Doves are the symbol of purity and peace. As such they are associated with love. No real symbolism. Just another way to add expenses. Same with the butterfly release.
