Flash mode can be several things. Auto, (useless), red eye reduction (almost useless) Night flash (picture is taken using flash, but combined with a slower than usual shutter speed to capture the background in ambient lighting) rear curtain synch (flash fires at the end of exposure rather than the beginning, good for pictures involving trails of light and such).

Flash comp is just what it sounds like, you plus or minus compensate the flash power to achieve the desired exposure. You might minus the compensation outside in daylight for fill flash. If you are using bounce flash or a diffuser, you would add flash comp.
