First of all I think that its great that you cook dinner for your family....keep it up!
Secondly, see if your mom will get you some cookbooks. Try to find things in the cookbooks that are fairly easy to do and start with those.
After a few months, get some more cookbooks. Look in those for recipes and try things that your good at...but also things that you know will be difficult. It's ok that you don't know how to cook it...even if you make mistakes, or it does not taste that good, your learning how to cook.
Keep trying new recipes and trying new ingriedients. My wife and I are trying to cook 300 new recipes this year...while it's an ambitious goal, we are learning the whole time.

Beef enchiladas are very good... easy too! Here is the Ortega recipe I use.... I usually serve with Mexican or Taco flavored rice.
1 pound ground beef
1 can (19-oz.) ORTEGA Enchilada Sauce, divided
1 1/2 cups shredded cheddar cheese, divided
6 (10-in.) flour tortillas
Directions
Preheat oven to 400°F.
In a large skillet, brown ground beef over medium-high heat until thoroughly cooked; drain. Stir in 3/4 cup enchilada sauce and 1 cup cheddar cheese.
Spoon meat mixture into tortillas. Roll up, burrito-style, and place seam-side down in a 9-inch baking dish. Pour remaining sauce over the top and sprinkle with remaining cheese. Bake for 15 to 20 minutes or until hot. Serve warm.
Your mom is very lucky to have such a helpful 12 yr old! Hope this helps you.

If you & your Mom like Tex-Mex, you can bake boneless chicken breasts seasoned with a bit of chili powder, garlic powder (or salt) & paprika. Put them in a baking dish with a bit of water in the bottom, bake then until almost done. Remove from oven, cover with picante sauce & cheese. Return to oven UNcovered and bake until the chicken is fully cooked without drying it out.
Add refried beans and/or spanish rice as side(s), pick-up some tortilla chips & enjoy! Sour creme and/or Guacamole can be thrown in there where you like as well!
A green salad also goes well with also this if you don't want to OD on the goodness of Tex-Mex all at once. : )
Another good recipe:
Smoked sausge (like Eckrich), egg noodles (or rice if you prefer), creme of mushroom soup (or creme of celery), as much cheese as you like, salt, pepper, onion powder, garlic powder.
Cook pasta (rice) according to directions on package. Mix with all other ingredients EXCEPT the sausage. Mix well. Place in a baking dish, place smoked sausage on top of this mixture. (You can slice it up if you like, but not necessary.) Bake for 25 minutes @ 350. Yum! (Tip : If you like to add broccoli to this, it makes a great add & you get some veggies, too! My 12 yr. old loves this one! Also, boxed rice or pasta side dishes go great for making this - like Rice-a-Roni Broccoli & Cheddar or one of the 3 Cheese Blends they have or Lipton Pasta (Rice) sides, etc...)
Good luck!

A neat idea I learned in school was to take a can of biscuits, and make mini pizzas. Preheat the oven to whatever temp the can says, flatten out the biscuits, spoon on spaghetti sauce, add cheese and whatever toppings you wish, and cook until golden brown.

Pizza-Dillas
4 beef or pork hot dogs
1 tablespoon olive oil plus extra for drizzling
Four 10- to 12-inch flour tortillas
1/4 cup mild chunky salsa (4 big spoonfuls)
8 squirts of ketchup (about 1/4 cup)
1 cup shredded mozzarella or provolone cheese
1 cup shredded cheddar cheese
1. Using a small knife, cut the hot dogs in half lengthwise, then into 1/2-inch pieces. Heat a large nonstick skillet over medium-high heat. Add the dogs and cook until browned all over, 2 to 4 minutes. Drain the crispy dog slices on paper plates to drain off the off the excess fat. The sliced hot dogs are your "pepperoni."
2. Add a drizzle more of olive oil to the pan, then add 1 tortilla. Cook for 1 minute, then flip it over with tongs and turn the heat to low. Place a big spoonful of the salsa on half of the tortilla, then spread it around with the back of the spoon. Add 2 squirts of ketchup and mix it into the salsa. This is your "pizza sauce." Top the sauce with one-fourth of the cheese—a big handful of each kind. Top the cheese with one-fourth of the crispy hot dog pieces. Fold over the tortilla to form a half-moon shape. Press down on the folded tortilla with a spatula to flatten the pizza-dilla and make it stick together.
3. Cook the pizza-dilla, flipping it carefully once more with a spatula, for 1 minute per side. Slide the pizza-dilla onto a plate and let it cool for 2 minutes, then cut into 4 wedges, like a pizza, and serve. Repeat with the remaining ingredients. Eat plain or top with more ketchup, salsa or even mustard and relish—whatever you like on hot dogs works here!
