I just received an "daily tip" from Scott (yes the papar towel company) and today's tip had to do with meatloaf.....Take a few pieces of bread and place in the bottom of the pan BEFORE you put in your meatloaf mixture....it is supposed to absorb all the grease, then just throw away the bread. I have never tried it, but it does sound logical. You could also use very good meat - 95 or better fat free.

You can remove the pan every 20 minutes or so and pour off any excess grease. Use a larger pan--one that won't have your meatloaf swimming in grease.
Also check your recipe. You may need one with leaner meat, or use more bread crumbs or cracker crumbs.
I once made a temporary rack by opening both ends of three tuna cans and setting aluminum foil over them. I used this rack to steam tamales, but I don't see why it wouldn't work for keeping your meatloaf.

Cook the meat loaf on a baking dish (for example, a 9" x 13") and bake the loaf free-form (without the loaf pan) - shape the loaf by hand or use a loaf pan to act as a mold, but turn the loaf out onto the baking dish.
This will allow the grease to drain away from the meat loaf, but the grease still be retained in the baking dish, not flowing into the oven or soaking into the meat loaf..
Also, baking it free-form will allow the meat loaf to have more of a crust, which is what I like.

Jill's Sweet and Tangy Meatloaf
INGREDIENTS
* 2 tablespoons butter
* 1 onion, finely chopped
* 3 tablespoons honey
* 2 tablespoons ketchup
* 1 tablespoon soy sauce
* 1 tablespoon hot sauce
* 2 pounds ground beef
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan.
2. Melt the butter in a skillet over medium heat. Stir in the onion, honey, ketchup, soy sauce, and hot sauce. Cook and stir 5 minutes, until onion is tender.
3. In a bowl, mix the onion mixture with the ground beef. Transfer to the prepared baking dish.
4. Bake 1 hour in the preheated oven, or to an internal temperature of 165 degrees F (70 degrees C).

good question. the way i do it is this make toast 2 in the morning. let it stay in the toaster all day to get hard. use a lean cut of meat form loaf onto toast. the toast soaks up the grease. you can either eat the toast (I DO)or pitch it (my son). this works very well.

You could put bread in the bottom of you're baking dish , to asobore the extra grease.also try turkey, it's makes a very good chili, it should make a good meatloaf.

Leaner meat is definitely the answer here. Also, what I do during cooking is pour the fat off as it is cooking. But you have to be careful because it can be dry if you overcook it.
