CORN BREAD
INGREDIENTS
2 eggs, beaten with a fork
1 c. cornmeal
1 c. flour
1 c. milk
2 tsp. baking powder
1/4 c. vegetable oil
1 tsp. salt
1 tbsp. sugar
1/2 c. corn (fresh, canned, or frozen if it’s taken out of the freezer ahead of time and soft)
DIRECTIONS
Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius). Put all the ingredients, except for the corn, into a large bowl.
Beat all the ingredients together with a big wooden spoon. The mixture should be smooth. Stir in the corn and mix. Pour the mixture into baking pan coated with nonstick spray. Bake in the oven for 25 or 30 minutes or until the cornbread is light brown on top. Remove bread from the oven, cut it into 9 pieces with a knife, and serve it warm for a lip-smacking treat.
MEXICAN RICE
INGREDIENTS
3 tablespoons vegetable oil
1 cup uncooked long-grain rice
1 teaspoon garlic salt
1/2 teaspoon ground cumin
1/4 cup chopped onion
1/2 cup tomato sauce
2 cups chicken broth
DIRECTIONS
Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and cumin. Stir in onions and cook until tender. Stir in tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.
CHICKEN EMPANADAS
3 cups chopped, cooked chicken
1 (8-ounce) package shredded Colby and Monterey Jack cheese blend
4 ounces cream cheese, softened
1/4 cup chopped red bell pepper
1 jalapeno, seeded and chopped
1 tablespoon ground cumin
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 (15-ounce) package refrigerated pie crusts
Water
Preheat oven to 400 degrees F.
Lightly grease a baking sheet. In a large bowl, combine the chicken and next 7 ingredients. Unroll 1 piecrust onto a lightly floured surface. Roll into a 15-inch circle. Cut out rounds, using a 3-inch cookie cutter. Re-roll dough as needed. Repeat procedure with remaining piecrusts, making 12 to 15 circles total. Arrange 1 round on a clean, flat surface. Lightly brush the edges of crust with water. Place 1 heaping teaspoon of chicken mixture in the center of the round. Fold the dough over the filling, pressing the edges with a fork to seal. Repeat with the remaining rounds and chicken mixture. (Up to this point, the recipe can be made ahead and frozen for up to 1 month). Arrange empanadas on the prepared baking sheet. Bake for 15 minutes.
