It's a bit late now but if you drop a clanger and make an inappropriate comment again, the best thing to do is graciously say: "Oh gosh, I am so sorry."
This needs to be done immediately after you see the offense the comment caused.
The immediate, genuine, apologetic response has always worked for me and I have said some seriously inappropriate things.

It was only a joke. She should lighten up. Personally I hate people who take offense to others trying to lighten sad situations.
The only jokes that are offensive are those that actually degrade someone(racist, for eg).
Leave her to sulk like the baby she is.

Apologize to her sincerely, explaining her that it was
unintentional. Then if she does not forget it, give her
time because sometimes people take time to forget
things which, though look small but have deeper impact
on the heart. You keep yourself sincere and dont repeat
that mistake or similar mistake. I hope time will get
things right!

Just apologize and tell her that at the time you felt that it was an innocent joke, but now you realize that it may have been offensive, but that wasn't you intentions. If she's a real friend, she'll accept it and move on. If not, then sorry, you have to just accept it and move on yourself.

sorry only means sorry once anymore than that is pointless she obviously hasn`t got your sense of humour so avoid telling anymore jokes to her but make sure you tell your friends the reason why you wont tell anymore jokes to her

Talk to her or send her a note or something that says: "I'm sorry that the joke I told was offensive to you. I didn't intend to offend you. Please forgive me. If there is anything I can do to make it up to you please let me know."
