It was Peter,actually, who was first called to the Gentiles in Acts chapter 10. If God couldn't have used Paul, He would have used someone else.

No. Judaism already provided for Gentiles with the Noahide laws, as described in Genesis. Paul convinced non-Jews that they were being rescued from laws that didn't apply to them to begin with.
