In a local mom and pop Chinese restaurant... typically you have cabbage, bean sprouts, onions, shredded carrots, celery, salt, soy sauce... ground meat or chopped bbq pork.

In a Vietnamese eggroll, you'll have less (or no) cabbage, but you'll have thin rice noodles instead.

It varies. Most chinese restaurant eggrolls contain cabbage, a few other veggies, and ground pork. There are lots of different types of eggrolls, though. The term really refers to the style of wrapper around it, rather than the content. It's kind of like asking "what's inside a sandwich?"
