Fried Zucchini
1/2 cup cornmeal
1/4 cup all-purpose flour
1 teaspoon dried basil
1 teaspoon kosher salt, plus for seasoning
Freshly ground black pepper
2 large eggs, slightly beaten
Vegetable oil, for shallow frying
2 small zucchini, sliced into 1/8 to 1/4-inch thick coins
Line a dish with paper towels and set aside. Whisk the cornmeal, flour, basil, salt, and pepper in a bowl.
Beat the eggs in another bowl.
Heat 1/4-inch vegetable oil in a skillet over medium heat until hot.
Working in small batches, toss the zucchini coins in the eggs, then coat in the cornmeal mixture to cover completely. Carefully drop the zucchini into the oil, and fry until golden brown, about 2 minutes on each side or until crisp. Remove from the oil with a slotted spoon and place on the prepared plate. Season with salt, cool slightly and serve.

Rather than deep-fried, and healthier...I slice zucchini wafer thin and fry in a large skillet with olive oil. Spread out so that each slice browns lightly on both sides, sometimes I do more than one batch. When cooked, remove to a serving dish. Add some minced garlic to pan with a little more oil and saute ( do not brown or garlic becomes bitter), add a little Balsamic or red wine vinagar and pour over zucchini. Add salt and pepper to taste. Delicious.

FRIED ZUCCHINI SQUASH
1 lb. zucchini squash
1 egg
2 tbsp. milk
1 c. dry bread crumbs
Oil for frying
1/2 c. grated cheese (Romano)
1/4 c. parsley flakes
1 clove garlic, minced
Beat egg and add milk. More milk may be used, if needed. Set this aside. Combine bread crumbs, cheese, parsley and minced garlic. This is coating used for squash. Wash and scrape zucchini. Slice lengthwise into 4-5 slices, depending on size. Dip slices in egg mixture, then into seasoning coating. Fry in hot oil until done. The seasoning bread crumb coating may be used for coating pork chops or chicken, also. Quite delicious.

The best way I have found is to slice them about 1/4 to 1/2 in thick. Make a batter of egg, milk and flour (salt & pepper). Then fry in butter or olive oil. They are the bomb.
2 egg
1/4 c milk
enough flour to make thick. Add until you have the consistancy you want. Some people like thinner and some like thicker batter.
add a little salt and pepper
fry in hot olive oil or butter until brown on both sides.
Drain on paper towel and salt while still hot.
Use care when using butter not to burn the butter.
This same batter can be used to fry cucumbers or green tomatoes.

I just had some last night. I used Italian bread crumbs for the coating. I fried them olive oil & served with homemade marinara. Delish!

just bread em and fry em like eggplant. i prefer to grill zucchini, i baste em with Italian dressing while on the grill. YUM!
