Crepe Batter:
1 cup all-purpose flour
Pinch salt
1 egg
1 egg yolk
1 1/2 to 2 cups milk
1 tablespoon melted butter
Top with cinimon and sugar, fruit, and/or whiped cream.

Sift the flour with the salt into a bowl. Make a well in the center and add the egg and egg yolk. Pour in the milk, slowly, stirring constantly and, when half is added, stir in the melted butter. Beat well until smooth. Add the remaining milk, cover and let stand at room temperature for at least 20 minutes before using. The batter should be the consistency of light cream. Heat a well greased 6-inch skillet,. Add 1/4 cup batter. Tip skillet from side to side until batter covers bottom. Cook until the bottom is golden brown, turn and remove to a plate. Repeat with remaining batter.

Pancakes... or Angel Food Cake
Assuming you only have flour, eggs, sugar and vanilla only. Maybe even salt?

Barbarella's German Pancakes - flour, eggs, milk and sugar. Also, you can add a little vanilla for extra flavor.

INGREDIENTS
2 eggs
2 tablespoons white sugar
3 tablespoons all-purpose flour
3/4 cup milk

DIRECTIONS
Place the eggs, sugar, flour and milk into the container of a blender. Process until smooth on low speed.
Heat a large skillet or griddle over medium heat. Pour batter about 1/4 cup at a time (or more for larger pancakes). Tilt pan to achieve a round shape. Heat until golden, then flip and brown on the other side. Serve immediately with syrup, or fresh berries and whipped cream.


Angel Food Cake - Uses the flour, sugar, eggs and vanilla, plus salt (which is actually optional).

INGREDIENTS
1 cup cake flour
1 1/2 cups white sugar
12 egg whites
1 1/2 teaspoons vanilla extract
1/2 teaspoon salt

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Be sure that your 10 inch tube pan is clean and dry. Any amount of oil or residue could deflate the egg whites. Sift together the flour, and 3/4 cup of the sugar, set aside.

In a large bowl, whip the egg whites along with the vanilla, and salt, to medium stiff peaks. Gradually add the remaining sugar while continuing to whip to stiff peaks. When the egg white mixture has reached its maximum volume, fold in the sifted ingredients gradually, one third at a time. Do not overmix. Put the batter into the tube pan.

Bake for 40 to 45 minutes in the preheated oven, until the cake springs back when touched. Balance the tube pan upside down on the top of a bottle, to prevent decompression while cooling. When cool, run a knife around the edge of the pan and invert onto a plate.

Vanilla Soufflé

4 tbsp. flour
2 tbsp. sugar
1 pinch salt
1 1/2 cups milk
1/2 tsp. vanilla
4 egg yolks
4 egg whites, room temperature
2 tbsp. unsalted butter/oil

Make the base:
Bring the milk to a boil, sift the flour and salt. Add the butter, vanilla and sifted mixture to the boiling milk and mix until smooth and thick stirring during the entire cooking time, about 4 to 5 minutes. Remove from the heat and beat in the egg yolks on at a time until well incorporated.

Butter/oil a soufflé mold and coat it with sugar, (about 1 tablespoon each).

Whip the egg white in a clean dry metal bowl until stiff peaks form, then gently fold in the soufflé base a1/3 at a time.

Put the mixture into the mold and bake at 400 degree F for 30 - 35 minutes.

Be gentle, don't slam or overhandle the mixture and don't open the oven door during baking!

Serve with a sprinkling of powdered sugar.

Assuming you have water and olive oil for cooking ...
A) fritters with eggs

1 cup of flour
1 cup of water (milk not recommended)
1/4 cup sugar
Mixiing bown
Frying Pan
Olive Oil

1) Sift flour into mixing bowl with sifter or strainer
2) Desolve sugar in water
3) Mix sugar/water mixture into flour a little at a time.
4) Batter should be a little runny
5) Heat frying and add 1/4 cup oil.
6) Drop batter into frying pan one table spoon at a time--each drop becomes one fritter.
7) Brown on either side

Other possibilities:
boiled dumplings and eggs

Almost the same as fritters but use less water to make the batter just moist but not runny.

Roll the batter into bite sized balls, then shape them like a foot ball and drop them into boiling water, for delicious dumplins. Serve with eggs any style.

Egg Custard

600ml (1 pint) Milk
6-8 Egg yolks
50g (2 oz) Sugar
1-2 Vanilla pods (or use 1 tsp vanilla extract instead)

Method

Split the vanilla pods lengthways scraping out the sticky seeds. (If using vanilla extract add it straight to the milk.)

Bring the milk almost to the boil, remove from the heat and add the vanilla seeds and pod(s).

Allow to stand for 15 minutes to allow the vanilla to infuse the milk.

Place the egg yolks, sugar and in a bowl, beat until thick and creamy.

Remove the vanilla pod(s) from the milk and slowly beat into the egg mixture.

Place in a heavy based saucepan and cook over a low to medium heat (do not allow to boil), stirring constantly, until the custard thickens.

If the custard becomes lumpy strain to remove the lumps.

Serve hot or cold.



Vanilla Pudding

3 cups milk
1/2 cup flour
1/2 cup sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
PREPARATION:
Scald 2 2/3 cups of the milk. Mix flour, sugar and salt; stir in remaining 1/3 cup milk. Add to scalded milk and cook over low heat, stirring constantly, until thickened and smooth. Continue cooking vanilla pudding for about 5 minutes to thoroughly cook flour.
Cool vanilla pudding slightly; stir in vanilla and pour into serving dishes. Vanilla pudding recipe serves 6

BREAD PUDDING

1 cup bread
2 cups milk
2 eggs
2 Tablespoons sugar
1/4 cup sugar
grated lemon rind (optional)
lemon flavoring (optional)

Remove crusts from bread. Pour milk over soft bread. Allow to stand until soft, about 30 minutes.
Separate eggs.

Add egg yolks, slightly beaten, 2 Tablespoons sugar, and grated rind of 1 lemon.

Pour into buttered baking dish and set in pan of water to bake until it sets.

Beat egg whites until stiff, gradually adding scant 1/4 cup sugar while beating, and a dash of lemon extract, lemoncello, or lemon juice (whatever you have). Spread the egg white mixture out on top of the pudding while still warm, then return to oven until slightly golden brown.

Cool, and just before serving add a spoon of tart jelly in the center of the meringue of each serving.

Pancakes are always good. I have a proffiterjole iron and I make mini ones, top it with a dust of icing sugar and then add either maple syrup or english toffee topping. Or just simply lemon juice and sprinkle of sugar.

Do you have any 'vinegar'? If you add a 'tiny bit' of vinegar you can 'sour' your milk, and make a wonderful 'coffee cake' with your ingredients ... vinegar is also a 'leavener' similar to 'baking soda and baking powder' ... basically, though, I'd say you can make 'crepes' or pancakes ... but you'll have to do a 'search' to find good recipes.
