Im travrriving from the UK to New York. I'll be arriving at Newark airport. The only concern im having is getting from the airport to where im staying which will be at the Roosevelt hotel in Manhatten. I would like to know how easy it would be to get a taxi at Newark airport that would take you directly to the airport.
Thank you in advance for any answers given to this question.

There is a taxi stand where they queue up. It isn't usually a problem but it can take a few minutes for your turn to get into one. It might be a bit longer if you arrive on a very late flight that has been delayed as there are fewer people arriving at the airport in taxis at that hour. There is a ground transportation desk that can assist you if you want to find less expensive alternate transportation but overall it isn't that difficult to get a taxi to take you to Manhattan.

It's easy but only use the Uniformed Taxi Dispatcher outside of each terminal. You might also like to check out:

Yes, cabs are plentiful at Newark airport. Although they charge a premium to drop off in Manhattan because of the tunnel charges and the cost of their return trip.

There is a shuttle bus called Newark Libery Airport Express that operates every 15 minutes to midtown NYC dropping off not far from your hotel. You can buy tickets online.

You should be able to get a taxi no problem, but I would recommend you look into mass transit options which might be better depending upon when you are arriving.

If you get to Newark Penn Station and take a train to New York Penn Station THEN get a cab it will probably be much easier on you.
