Black and White Laser Jet printers will print in Gray Scale. Color Laser Jet printers are for Color Printing. You will want a Laser printer if you do high volume printing (probably more than 300 pages per month). Color Laser Jet printers are more expensive than B & W Laser Jet printers, but if you need to print color and you do a lot of printing, it is probably the most cost effective way to go.

Black and white Laser Jets only have black ink.
Color printers use a combination of four colors to reproduce a wide range of colors. What are they for? Making color prints, instead of black and white ones...

B&W Laser prints black or differen gradients of black (level of grayness). Similar to a B&W photcopier.
Please note that LaserJet (tm) is a registered trademark of Hewlett Packard. Generic term is "laser printer".
Color laser prints stuff in full color, like a color copier. Output cost more, of course.

Black White (BW) prints the colours mixed by those two base colours which is just merely shades of gray.
Colour prints full spectrum or at least a good approximation of full spectrum of colours.
BW is way cheaper than colour, but intended for simpler text reports, labels etc while colour is for professional true photo quality (consumer grade inkjets are jokes compare to what quality this produces)

There are tons of old printers (pre-2000) that are only black and white. Good luck finding one that still works though.
