in Canadian towns you are not allowed to set up a tent for a night in public parks, but most places will allow you to set up a tent for the night on church property. is there some law allowing this?

If it's allowed, it's because the property owner has given permission.
"Most places" the church probably would, but it'd be better to ask first.

Church property is private property. If the church officials say you can camp there, then you can.
