Depends on which Bond you're talking about. The most recent one would stand a chance, and Conrey may very well be tough enough to get away alive, but not win.
None of the other Movie Bonds would win such a fight.
The Bond from the books however would dismantle Bourne like a kid ripping apart a paper doll. Bourne started as an attempt to Americanize the original Ian Flemming Bond.
