There are a lot of stuff that goes into making a good restaurant. You've got to make sure you settle on the concept that will attract the clientele. Location has a lot to do with this. Go to successful restaurants that have stood the test of time and grab a togo menu. Pay attention to what their interior looks like, how the staff works, and what neighborhood they are in. Also, try and go in when it's super busy, so you can get a good idea of how the restaurant operates at full speed.

This is the number one reason that restaurants fail. The food can be great, you can get more business than you can handle, but if you are not right with the I.R.S. and Uncle Sam, you are out of business in a matter of months!
9. An assistant chef who follows your vision. No one can be on site all the time and if you do not have someone who shares your dream, your restaurant will literally become schizophrenic. Either your customers will love what you are doing, or what you assistant is doing, but neither of you will survive.
10. Good Will. Good will from your customers, from the local papers, from the word on the street, from your staff, and from yourself. A great restaurant is like a dynasty. You become this magnificent family that "Feeds" off of each other and it becomes a culinary love affair. Achieve all of that, and you will have a Great Restaurant.
