(The last two aren't really rap, but many people that I know who are into rap also enjoy these albums.)

I haven't looked at anyone else answers and I would say

1) Paid in Full - Eric B & Rakim because its timeless and crazy sick.
2) Ready to Die - Biggie because it introduced us to the most influential rapper of all time.
3) Straight Outta Compton - NWA. birth of west coast rap scene.
4) Run D.M.C. - Run DMC because they were innovators. Every fan needs to know history of what the art form is about.
5) By All Means Necessary - Boogie Down Productions. Because it proves that you can say something that has meaning and makes the listener think yet make it still sound fresh.
