Profession trainers are in the major cities and usually also in some smaller cities as well. Talk to them to learn.
You can only have 2 of the primary professions, but you can have all of the Secondary professions (First Aid, Fishing and Cooking).

you need to find a profession trainer, just talk to a guard, he will tell you where to go.
