In Microsoft Word go to the Tools Menu click on Options and uncheck (check spelling as you go). This will turn off spell checking as you go.
Be sure to turn it back on afterwards because this could be a useful tool.

If you mean stop it from checking your work automatically and putting those red lines under the words then go to Tools > Options > Spelling and Grammar tab > uncheck "check spelling as you type" and then uncheck "check grammar as you type". That doesn't stop it from detecting spelling/grammar mistakes but only stops it from telling you by putting red/green lines under the mistakes. If after you do that you want to check your spelling/grammer then press F7 and the spell check box will come out =) hope that helps
