Illinois State University is great, we finished our new, state of the art College of Business building in 04-05. It has all of the things you mentioned, i especially like the campus. It really is a bigger school with a smaller school atmosphere.

The best undergraduate business programs in California are UC-Berkeley, USC and UCLA. However, Stanford and any of the UC schools would be great places for economics. Don't go to any public university in California unless it is part of the UC system.
In Texas, UT-Austin is the best for business. Rice is the best school in Texas -- but may not have an undergraduate B-School.
In New York, NYU and Cornell would be the best schools to go to. Both are highly competitive.
I am of the opinion that the University of Florida is the only school in Florida worth going to. Others may disagree. They have a good B-School.
In Illinois, U of Chicago and Northwestern are the best universities. Both have highly ranked B-Schools -- but for MBA and PhD students. But their economics departments are outstanding. For undergraduate business, U of I would be the place to go.

Southern Illinois University (Carbondale):
It's laid back but a good school. Beautiful surroundings with a major national forest a few miles away (Shawnee National Forest). They have Marketing (in the Business School/accounting and finance driven) as an option and a nationally accredited Advertising/Integrated Marketing program in the School of Journalism if you are interested in the print based/agency/creative side of marketing.

I had friends who majored in those fields. They went to USF (University of San Francisco) and SJSU (San Jose State University.) Have you been accepted to schools in all these states? Also, remember that you will have to pay additional fees if you have not lived in the state in which you are going to school in, for more than 2 years,

It really depends on the school. If by New York, you mean NYU, go for NYU. Its around a lot of business so you can draw connections.

Pick a college that is rated high in the field you wish to enter.
Those in your state may have the lowest Annual fees. Best of luck to you in your studies.
