Stitching is like sewing. You can do it by hand or on a sewing machine. (Unless you mean cross-stitching. That's something else all together.)
Crocheting and knitting are similar, but crocheting is easier to do. It takes more yarn than knitting, but if you've never done it before, I recommend you start with crocheting. Do a search on the internet for instructions for all of them. Here are a few links to get you started.
