They use the "Mate - de-mate" device, which basically boosts the shuttle up 50 feet, they role the 747 under it, and then lower it onto the docking points.
At the cape, they use a similar device to raise the shuttle again, move the 747 out from under it, then lower the shuttle to the ground. After that, it's rolled into the Vehicle Preparation Building, where it's checked & made ready for the next flight.

With the Mate-Demate Device (MDD), a large gantry-like steel structure used to hoist the orbiters off the ground during post-landing servicing operations and during mating and demating operations with the 747 Shuttle Carrier Aircraft (SCA).
